  • Southern Plantation Cake
    My sister made this the other day and it was soooo good!!! She got this recipe from her friend that lives in the South. Thought I would share.

    1 Yellow Butter Cake Mix, Duncan Hines
    1 Cup Sugar
    4 Eggs
    1 Cup Oil
    8oz. Sour Cream
    1 1/3 Cup Coconut
    1 Cup Pecans, chopped
    Mix all ingredients together and bake at 325 degrees for 1 hour.

    Plantation Cake Icing:
    1 box Powdered Sugar
    1/2 Stick Butter
    8oz. Cream Cheese
    1 tsp. Vanilla
    1 Cup Pecans, chopped
    Mix all ingredients together. If it is to thick, add alittle bit of milk to get the consistency of icing you want. Spread on cake, eat and enjoy!

    Since you bake the cake at 325 for 1 hour....maybe a bundt pan? A tube pan might be too thin for this long.

    SO SORRY I haven't responded!!! My computer has been down!! I am back now.

    The recipe we use is for 2 round pans to make a regular layer cake. And yes it does take an hour. The batter is very thick!!!
