freezing mini cupcakes?

  • freezing mini cupcakes?
    I'm trying to get ahead for an Easter party at the end of the month. Do you think I could freeze mini cupcakes -- unfrosted, of course -- then just thaw and frost? I know I'll end up in a time crunch, but I don't want to do it if it's going to dramatically affect the quality.

    I'd wrap them well -- probably two or three per package.

    Thanks for any advice you can share!

    I have frozen cakes and cupcakes many times. They taste just-baked when they thaw.

    I freeze these by the dozens. I just put wax paper on the bottom of a big container and wax paper between the layers and a piece on top...

    I found a new cupcake recipe this morning in Southern Living -- it starts with a cake mix, then adds a few ingredients. I'll post a review when they're done.
