    How long does fresh ginger last in the freezer?
    I have a recipe that calls for 1 1/2 tsp of ground ginger? Can I use fresh? Will my fresh ginger still be good yet? And how much should I use?

    I have a chunk in my fridge freezer that I put in there over two years ago. It still smells and tastes fresh when I grate it.

    I love fresh ginger, that is good to know that it could last that long. Will go buy some now. Thanks for that bit of advice.

    My ginger lasts indefinitely in the freezer, well wrapped. Also, it's so much easier to grate when frozen (use a microplane grater and it works wonderfully)... Anne
