    Another Swans Down/Sunbeam Mixmaster Recipe from my Mom's cookbook.

    Chocolate Pound Cake

    Have the shortening at room temperature. Line botton 0 9-inch tube pan with paper. Pre-heat oven 350°F. Sift four once before measuring.

    Measure into sifter:
    2 3/4 sifted Swans Down Cake Flour
    3/4 tsp. cream of tartar
    1/2 tsp. b. soda
    1 1/2 tsp. salt
    1 3/4 cups sugar
    Measure into Mixmaster bowl:
    1 cup butter or other shortening
    Measure into cup:
    Milk (see below for amount)
    1 tsp. vanilla
    Other ingredients:
    3 eggs and 1 egg yolk, unbeaten
    3 squares Baker's unsweetened Chocolate, melted

    *with butter, margarine, or lard ,use 2/3 cup milk. With vegetable or any other shortening , use 7/8 cup milk. (Butter gives a richer chocolate flavor to this pound cake, but other shortenings may be used.)

    Mix shortening just to soften. SIft in dry ingredients. Add milk and beat at med speed, 2 minutes. Add eggs and chocolate and beat 1 minute longer. (Scrape bowl occasionally during mixing process and scrape beater between beating periods.)

    Turn batter into pan. Bake in 350° F. oven for 1 hour and 10 minutes, or until done. Cool cake in pan about 15 minutes. Then loosen from sides of pan with spatula or knife. Turn right-side up on cake rack to finish cooling.
