1/2 teaspoon chili paste with garlic
1/2 cup honey

Thai Red Curry Sauce

1 tablespoon vegetable oil
2 tablespoons prepared Thai red-curry paste
1 (14 ounce) can unsweetened coconut milk
2 tablespoons fish sauce
1 tablespoon brown sugar
1/2 teaspoon salt
2 tablespoons minced fresh cilantro
Heat oil in a medium saucepan. Add curry paste and stir and mash into the oil over medium-low heat to warm the paste. Add the coconut milk and bring to a simmer. Stir in the fish sauce, sugar and salt. Taste for seasoning and stir in the cilantro just before pouring over rotated chicken, beef or pork.

Tomato BBQ Sauce

2 tablespoons vegetable oil
1 medium onion -- chopped
3 (8 ounce) cans tomato sauce
1/2 cup red wine vinegar
1/2 cup brown sugar
2 tablespoons Worcestershire sauce
1/2 teaspoon freshly ground pepper
Heat oil in medium saucepan and saute onion until softened. Stir in remaining ingredients and simmer, uncovered, until thickened, about 30 minutes, stirring occasionally. Let cool, then cover and refrigerate for up to 2 weeks.

3 medium apples -- peeled and sliced
1/2 cup dried cranberries
2 tablespoons butter -- melted
1/4 cup real maple syrup
1/2 teaspoon ground cinnamon
2 (14 x 12 inch) sheets heavy-duty aluminum foil
Place the apples and dried cranberries on one sheet of foil. Stir together the butter, maple syrup and cinnamon. Drizzle over the fruit. Top with second sheet of foil and fold edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 25 minutes.

Arrange fruit on one sheet of foil. Stir together the pineapple juice, butter, brown sugar and curry powder. Drizzle over fruit. Top with second sheet of foil and fold edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 10 minutes.

2 cloves garlic -- minced
1/4 cup olive oil
1 teaspoon grated orange zest
1/4 teaspoon dry rosemary leaves
2 slices orange
2 (14 x 12 inch) sheets heavy-duty aluminum foil
Wash and pat dry the chicken. Lay in a flat baking dish. Combine the garlic, olive oil, orange zest and rosemary in a small bowl. Pour over the chicken and marinate for 2 hours in the refrigerator. Lay chicken on one sheet of foil. Top with the orange slices and 2 tablespoons of the marinade. Top with second sheet of foil and fold the edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 20 minutes.

Lay the ham on one sheet of the foil. Lay the pineapple on the ham. Stir the brown sugar and ginger into the pineapple juice and spoon over the ham. Top with second sheet of foil and fold edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 10 minutes.
