How long do I boil a can of evaporated milk to get caramel?
Hello
I read on here a few years ago about boiling evaporated milk to make caramel.
How long do I let it boil?
Thanks for your quick help!

I didn't know that you could do that with evaporated milk. I thought it was sweetened condensed milk.

Put in pan of water, bring to a boil and simmer gently for about three hours, I think. Keep covered just in case of explosion, add water if needed to prevent from boiling dry. I had no problems at all, but obviously you need to be careful!

It is unsafe to boil sweetened condensed milk but I have three other methods you can use.
1. STOVETOP: Pour 1 can sweetened consendensed milk into top of a double boiler pan; cover. Place over boiling water. Cook over low heat, stirring occasionally, for 40 to 50 minutes, or until thick and light caramel colored. Remove from heat. Beat until smooth.
2. OVEN: Preheat oven to 425*. Pour 1 can Sweetened Condensed milk into 9-inch pie plate. Cover with aluminum foil; place in shallow pan (pan should be larger than pie plate). Fill pan with water. Bake for 50 to 60 minuutes, or until thick and light caramel colored. Pour milk into small mixer bowl; beat until smooth.
3. MICROWAVE: Pour 1 can Sweetened Condensed Milk in a large microwave safe bowl. Cook on medium (50%) power for 4 minutes, stirring halfway through heating time. Reduce power to medium-low (30%) power; cook for 8 to 12 minutes, stirring with wire whisk every few minutes, until thick and light caramel colored. Note: Microwave ovens vary; adjust timing accordingly.

CROCKPOT
I tried this in the crock pot last week and it worked great! I set it on high and once I saw the bubbles forming around the edge, I added the cans. It boiled like it would have on the stove. When time was up, I just turned it off and unplugged it. I took the cans out when it had cooled enough so I could use my hands to pull the cans out.

Place one can of Eagle Brand sweetened condensed milk in sauce pan of water. Be certain the water covers the can. Boil for 2 hours, let can cool completely before opening. The milk will have turned into a rich caramel, which you can use as fillings for candies.
I have made this and like it very much. Came out of a Candy recipes book.

RE: How long do I boil a can of evaporated milk to get caramel?
I remember reading warnings about not doing this...some people have been severely burned by exploding cans...or the carmelized milk shooting out under extreme pressure & burning them. I think you might want to check with the condensed milk's web site. I know years ago, a church member put this recipe in the church's cookbook. There was some discussion back then about the dangers & warnings that were already out. Some people think it works - other's have some major scars & medical bills.
