What is the difference between enchilada sauce and taco sauce?

  • What is the difference between enchilada sauce and taco sauce?
    I was going to make the southwestern lasagna, but it calls for enchilada sauce, which we cannot get here in Canada!!

    I looked for the enchilada sauce in the Mexican food session in the grocery store months ago, but no luck. I got 1 can only (silly, I know) while going on vacation in Vermont. The brand is Old El Paso and the list of the ingredients on the can include tomato puree. I just checked Texascooking.com, and Chili Gravy doesn't have any kind of tomato paste or sauce. There are some recipes in this bb how to make your enchilada sauce but do not try any yet. Let's see if I can find it.

    Forget the canned stuff! From The Can Opener Gourmet: makes 1 3/4c.
    15oz. tomato sauce
    1tsp. sugar
    1/2tsp. garlic powder
    1/2tsp. onion powder
    1/2tsp. chili powder
    1/2tsp. dried cilantro
    1/4tsp. ground cumin
    1/8 to 1/4tsp. cayenne pepper (optional)
    Mix all ingredients together. May be heated or served at once.
    Personally, I'd heat it up.

    This came up on a search but is basically the recipe a friend gave me when I asked how she makes her enchilada sauce. It's really pretty simple and may be what you need for your recipe.

    Enchilada Sauce

    2 tablespoons vegetable oil
    2 tablespoons all-purpose flour
    2 tablespoons chili powder
    1/2 teaspoon ground cumin
    1 (8-ounce) can tomato sauce
    2 cups water
    1 teaspoon salt
    1/4 teaspoon garlic powder

    Heat oil in large 2-quart saucepan; stir in flour and chili powder; cook for 1 minute.

    Add remaining ingredients bring to a boil and simmer for about 10 minutes.

    Makes 3 cups sauce.

    This is our favorite recipe for enchalada sauce. A friend that owned a Mexican restaurant gave to my mom years ago.

    Enchalada Sauce:

    6 tablespoons butter
    2 quarts water
    2 teaspoons salt
    1 tablespoon chili powder
    1 tablespoon paprika
    2 tablespoons beef base
    1/2 cup tomato paste

    Thicken with:
    2 cups cold water
    1 cup flour

    Combine first seven ingredients in a large sauce pan or pressure cooker. Simmer in sauce pan for at least one hour (up to 3 hours) or cook in pressure cooker for 20 mins.
    Combine cold water and flour and add to sauce gradually to thicken. Bring to a rolling boil for 3-5 minutes, remove from heat.

    This makes enough sauce for two 9 X 13 inch casserole dishes.
    You can cut the recipe in half, or freeze half of the sauce.

    enchilada sauce is a thin sauce for making enchiladas...and it's in a can, small medium or large size cans...many brands out there (well out here...LOL) such as: El Pato, La Vicitoria, Rosarita, Old El Paso etc...it could be red or green, mild medium or hot

    taco sauce is in a bottle and used on tacos BUT NOT TO BE CONFUSED WITH TABBASCO SAUCE..red or green, mild medium or hot

    salsa is used to dip your chips, some is chunky, some may have corn and black beans, some come in bottles or jars and some in tubs in the dairy section, mild medium or hot

    SOUTHWEST CHICKEN LASAGNA

    Comments: To make this as low fat as possible, on your soups use fat-free & use low-fat cheese.


    Ingredients:
    1 (10 oz.) pkg. lasagna noodles

    COTTAGE CHEESE MIXTURE:
    4 egg whites, lightly beaten
    24 oz. fat-free cottage cheese
    1/3 c. chopped parsley
    1 (4 oz.) canned diced green chili peppers

    LASAGNA:
    1 c. chopped onions
    1 t. minced garlic
    2 (10 3/4 oz.) cans condensed tomato soup
    1 (10 oz.) can enchilada sauce
    1 (4 oz.) can diced green chili peppers
    1 T. chili powder
    1 t. ground cumin
    1/2 t. ground black pepper
    4 c. cooked chicken breasts, torn into bite-size pieces (can use a whole chicken cut-up, cooked & deboned if you'd like)
    3 c. (12 oz.) Colby & Monterey Jack cheese mix


    Instructions:
    NOODLES: Cook the noodles according to the directions on the pkg. Drain & set aside.

    COTTAGE CHEESE MIXTURE:
    While noodles are cooking, stir together the egg whites, cottage cheese, parsley & diced chilies. Set aside

    LASAGNA:
    Lightly spray an unheated saucepan with no-stick spray. Add the onion, & garlic. Cook & stir over med. heat until tender.
    Stir in the soup, enchilada sauce, green chilies, chili powder, cumin, & black pepper.
    Bring to a boil, then reduce the heat.
    Simmer, uncovered, for 10 min., stirring often
    Preheat oven to 375
    Lightly spray a 13" x 9" x 2" baking pan with no-stick spray.
    To assemble the lasagna, place four of the noodles in the pan.
    Spread half of the cottage cheese mixture over the noodles.
    Top with half of the sauce mixtures, & half of the chicken.
    Then top with half of the cheese
    Repeat layers with the remaining noodles, cottage cheese mixture, sauce mixture, chicken, & cheese.
    Cover with foil or lid
    Bake about 50 min or until bubbly.
    Let stand 15 min. (this is IMPORTANT) before cutting

    There are many different versions of Mexican sauces, any of which can be used with tacos or enchiladas. But I assume you're talking about those North American red liquids passed off as taco and enchilada sauces outside the U.S. Southwest. The difference between them is usually that taco sauce contains tomato and enchilada sauce does not.
