    I went to a fish fry on Sunday and someone brought a delicious dish.  I'm hoping ya'll can help me out.  I know it had purple cabbage, apples, bacon, and some kind of sweet vinegrette (sp?) type dressing.  Anyone know of anything similar?

    Purple Slaw
    A satifying salad filled with healthy vegetables .

    Servings: 12

     

    • 1/2 medium head red cabbage, finely shredded
    • 1/4 cup finely minced white sweet onion, vidalia
    • 2 sweet apples, peeled, cored and finely diced
    • 1/2 cup low fat mayonnaise
    • 1/2 cup plain low fat yogurt
    • 1/4 to 1/2 teaspoon salt
    • 1/8 teaspoon pepper
    • 2 teaspoons sugar
    • 2 tablespoons lemon juice
    • 2 tablespoons 2% milk

    In a large serving bowl, toss together the cabbage, onion, and apples. In a small bowl, whisk together the mayonnaise, salt, pepper, sugar, lemon juice, and milk. Pour dressing over the cabbage mixture, and toss to coat. Chill until time to serve.


    Per Serving: 61 Calories; 3g Fat (41.0% calories from fat); Trace Saturated Fat; 1g Protein; 8g Carbohydrate; 1g Dietary Fiber; 4mg Cholesterol; 104mg Sodium. Exchanges: 0 Grain(Starch); 1/2 Vegetable; 0 Fruit; 0 Non-Fat Milk; 1/2 Fat; 0 Other Carbohydrates.

    DIRECTIONS

    You could probably add apples to this...
    1/2 cup freshly squeezed orange juice
    1/4 cup freshly squeezed lime juice
    1/2 small red onion, coarsely chopped
    2 cloves garlic, coarsely chopped
    1/4 cup fresh basil leaves
    2 tablespoons chopped cilantro leaves
    1 tablespoon honey
    1/2 cup canola oil
    Salt and pepper
    1/2 head red cabbage, finely shredded

     

    Combine all ingredients, except cabbage, in a blender and blend until smooth. Season with salt and pepper, to taste. Place cabbage in a large bowl and toss with the vinaigrette. Season with salt and pepper and let sit 30 minutes in the refrigerator before serving.

    TANGY APPLE SLAW WITH EQUAL  
    45% calorie reduction from traditional recipe.
    4 cups shredded green cabbage
    1 cup shredded carrots
    1 cup chopped unpeeled apple (1 medium)
    1/2 cup thinly sliced red or green pepper strips
    2/3 cup lite mayonnaise
    1/3 cup reduced fat sour cream
    3 tablespoons Equal® Spoonful*
    1 1/2 tablespoons Dijon mustard
    1 tablespoon lemon juice
    1/8 teaspoon pepper
    Combine cabbage, carrots, apple and pepper strips in medium size bowl. Mix together mayonnaise, sour cream, Equal®, mustard, lemon juice and pepper in small bowl; stir until well blended. Spoon Equal mixture over cabbage mixture; gently toss to combine. Refrigerate, covered, 1 to 2 hours to allow flavors to blend.

    Makes 6 servings.

    * May substitute 4 1/2 packets Equal® sweetener
