I got this recipe from a good friend who has made these many times for Easter. She says they are very cute and quite tasty.
Robins Nest Cookies
Nests: 2 1/4 cups flour 1 cup butter -- softened 1/2 cup brown sugar 2 eggs -- separated 1 1/2 teaspoons vanilla 1/2 cup chopped walnuts Eggs: 2 tablespoons butter -- softened 2 cups confectioner's sugar 3 tablespoons light corn syrup 1/2 teaspoon almond extract 2 drops blue food coloring 1 drop green food coloring
For nests: Sift flour; Cream butter and brown sugar until light and fluffy. Beat in egg yolks and vanilla.
Stir in flour, half the amount at a time. Blend well to make a stiff dough. Beat egg whites in a bowl until foamy.
Sprinkle chopped walnuts onto waxed paper. Roll dough into balls, then roll into egg whites, then into nuts. Place 2 inches apart on a cookie sheet. Press out hollow with your thumb. Bake at 350° for 10 - 12 minutes. Cool before adding eggs.
For eggs: cream together butter sugar, and corn syrup. Knead in color. Shape eggs. Place 2-3 eggs in each nest.
