I am going to bake this cake tonight. I only have pineapple tidbits but figure they should work instead of the crushed. I will find out and let you know how it turns out. 

 

 

Pineapple Upside-Down Cake

from "Quick Fixes with Mixes"

6 T. butter
1 (20 oz) can crushed pineapple
juice reserved
3/4 c. reserved pineapple juice
1/2 c. chopped pecans
1 1/3 c. packed light brown sugar
1 (18 oz) white cake mix

Preheat oven to 350 degrees. Melt butter in 9x12" baking pan. Drain pineapple reserving 3/4 c. juice. Sprinkle nuts in bottom of pan, and cover evenly with brown sugar. Arrange pineapple on top.

Prepare cake mix according to directions, replacing 3/4 c. liquid with reserved juice. Pour over brown sugar and bake for 45 - 50 mins. or until cake top springs back when touched.
