I had this at International food day at my son's school. It is so good and all the kids loved it too!
Samoan BBQ Chicken
1/2 c soy sauce
1 T lemon juice
1-11/2 tsp crushed garlic
1/2 tsp ground ginger
1 tsp sugar
6-8 chicken legs or thighs
Combine all ingredients except chicken in a saucepan. Bring to a boil, Add chicken pieces, adding more water if needed to cover chicken. Boil chicken for 30 mins, Turn off heat, but let chicken marinate for at least 2 hours, Grill marinated chicken over hot coals about 5-7 mins, until chicken is cooked thoroughly.
Recipe sounds delicious. But, I have a question.... the chicken needs to be refrigerated while marinated, right??~~Vicki

Good question, Vicki! The recipe doesn't say whether or not it should be refrigerated, but when I make it, I will put a top on the pan and stick it in the fridge until it is time to grill.
