Homemade Beef Vegetable Soup - Help Please!!

    I have looked at many recipes for this soup.  I want to make some to take to work for a birthday potluck next week.  I love and trust this board for quality recipes!!  Please post your recipe for this soup!  Thank you all,  Charter

    Beefy Macaroni Vegetable Soup

    1 lb stew beef, cubed
    1 tsp oil
    1 onion, diced
    2 stalks celery, chopped
    16 oz can stewed tomatoes
    1 bay leaf
    2 qts water
    4 carrots, peeled and sliced
    14 1/2 oz can green beans, drained
    1 cup macaroni, uncooked

    Brown stew beef in oil. Add onions and celery; cook until tender. Blend in stewed tomatoes, bay leaf, water and carrots. Simmer for at least 2 hours. Stir in green beans and uncooked macaroni. Bring to a boil, reduce heat, and simmer for 20 minutes. Add a little additional water if necessary.

    We really like this one.
    I also bumped a thread for you, you can omit the macaroni and add any veggies or pot barley to this, I make it quite often Karen

    Beef Vegetable Soup


    1 lb. beef stew meat

    2 cups green beans

    2 cups carrots

    1 medium or ½ large onion, chopped

    1 cup peas

    1 cup carrot

    1 cup celery, chopped

    1 cup potato, cubed

    ¼ to ½ cup cabbage

    4 to 6 cups beef broth from carton

    1½ cups tomato sauce or stewed tomatoes

    1 teaspoon Worchestershire Sauce

    salt & white pepper to taste

    ½ small clove garlic, finely chopped

    1 bay leaf



    First brown your meat well. In the same pot you browned the meat in

    add all the rest of the ingredients. If using the crock pot put the

    meat in, all the vegetables, sauces and spices as listed above and

    stir well. Cook on top of the stove until vegetables or just done

    about 45 minutes to 1 hour. If in the crock pot cook all day or at

    least 8 to 10 hours. Enjoy

                                  VEGETABLE SOUP

      Amount  Measure     -- Preparation Method
    --------  ------------  --------------------------------
      46      oz            V-8® vegetable juice
       6      cups          water
       4      medium        carrots -- sliced
       2      medium        onions -- chopped
       6      medium        potatoes -- chopped
       3      stalks        celery -- chopped
       3      cups          cabbage -- chopped
       8 3/4  oz            corn
       8 3/4  oz            peas
       8 3/4  oz            green beans
       2      Tablespoons   sugar
       2      Tablespoons   worcestershire sauce
       2                    beef bouillon
       1      teaspoon      garlic powder
       2      lbs           stew meat

    in a large pan brown meat and drain off grease

    ( if not using meat  just add all ingredients  and cook till tender)

    add juice and water and bring to a boil add sugar, bouillion cubes,
    worcestershire sauce and garlic powder.
    cook for about 1 hour then add onion, celery, carrots  cook for about 1 hour then add canned vegs. and potatoes and cabbage
    cook for another hour till all are tender.

    if you want you can add 2 lbs stew meat

     I don't use a recipe for veg. beef soup, but, if I did  it would be more like the one malrobsmom posted. I use my own homemade V-6 juice, chicken broth or vegetable broth made from Knorr's bullion cubes in place of the water, and a can of  cream style  corn plus a can of whole kernel corn, everything else in this recipe would go in except  the sugar and worcestershire sauce. I also probabaly use more potatoes than anyone else cause I love them so much.Stick out tongue In fact I just bought a london broil roast to use in mine i'm making tomorrow. I like to cook the meat and all the spices/liquids together first  with the onions and celery( removing the meat when done) and then add the potatoes & carrots so they can absorb all the flavor and then add the rest of the vegies when they are done and simmer for another 20-30 minutes. I add the meat back in when the sosup is done so it doesn't overcook  Good luck on whichever recipe you use and i'm sure any one of the ones posted here will be great for your potluck.     Hi Charter,

    Here's my recipe for the soup. 

    1-2 pks. shank meat (depends how much meat you want in your soup
    3 beef bouillon cubes

    1 envelope Soup Starter
    1 lg. can tomatoes; mashed apart
    1 bag frozen mixed vegetables
    potatoes (to your taste - and room in the pot)

    Put the shank meat in your crockpot with the bouillon cubes and enough water to cover.  Cook overnight.  (You can just cook the meat on top of the stove if you don't want to use a CP).  Remove the meat, break apart; discard fat & bones.

     In large pot, put the Soup Starter, 6 cups water, then add everything else.  It should come up about 1/2 inch from the top of a Dutch oven.  Taste and add salt and/or pepper if needed.  Cook for at least an hour; you can let this simmer for a long time if you have the time for it.  It's a really good soup.

    Homemade Vegetable Beef Soup


    1.75 lbs. ground beef or chuck
    2 cups onion-chopped
    4 cups new potatoes-cubed
    1/4 head cabbage-chopped
    3 (12oz each) V-8 juice
    1 (14oz. each) beef broth, chicken broth, vegetable broth
    1 (15oz) peas & carrots)
    2 (15oz. each) corn
    2 (15oz. each) green beans
    1 (14.5oz) crushed tomatoes
    1 can water
    Seasoned salt, pepper to taste


    In a 8 quart pot, brown beef and 1 cup onion. Drain. Return to pot and add remaining ingredients. Bring to a boil and then simmer, uncovered for 1 hour. In the last 30 minutes of simmer add some more seasoned salt. ( he uses Lawry's) Then let sit 1 hour to thicken and do not stir.
