I have seen a mention of crockpot stuffing/dressing and was hoping you would share a tried and true recipe. I have never made stuffing in the crockpot but would love to try it out this year. I am having about 15 people for Thanksgiving dinner and this would help with oven and time management.
I will share an old family recipe with you.
Corn Pudding
1-2 cans whole kernel corn - place in 2 quart casserole dish
In a blender or bowl mix together 3 eggs, 1 cup sugar 1/2 cup water and 2 T. flour. Mix well and pour over corn in casserole dish. Add 2 T. melted butter to dish and stir well.
Bake in 350 over for 30 minutes - STIR WeLL -return to over and continue baking for another 30 minutes or until set.
This recipe came from my grandmother and I have never see one exactly like it in a cookbook. It is a family favorite.

Moist Poultry Dressing
2- 4-1/2 oz. cans sliced mushrooms, drained
4- celery ribs, chopped, (about 2 cups)
2- medium onions, chopped
1/4 cup minced fresh parsley
1/4 - 3/4 cup margarine, (enough to flavor bread)
13 - cups cubed day-old bread.;( Use 2 bags bread cubes ,Make one mixed bread (white & wheat), the other corn bread cubes... your preference.
1-1/2 teaspoons salt
1-1/2 teaspoons sage
1- teaspoon poultry seasoning
1-teaspoon dried thyme
1/2- teaspoon pepper
2- eggs
1 or 2 -- 14-1/2 oz. cans chicken broth, (enough to moisten bread)
In large skillet, saute muchrooms, celery, onions, & parsley in margerine until veggy's are tender.
Toss together bread cubes, salt, sage, poultry seasoning, thyme,& pepper. Add muchroom mixture.
Combine eggs & broth & add to bread mixture. ..... Mix well.
Pour into greased slow cooker & Cook on low for 5 hours, or until meat thermometer reaches 160*
Yield: 14 servings

The recipe below is T & T. I've used it for probably 25-30 years. It is moist and delicious!
Crockpot Stuffing
In 1 cup Butter-saute for 5 minutes:
2 Onions-chopped
2 cups chopped Celery
1 (4-ounce) can Mushrooms-drained*
Set aside.
In a 2-quart bowl, combine:
4 cups Chicken Broth
1 teaspoon Poultry Seasoning
1/2 teaspoon Sage
1 1/2 teaspoon Salt
1/2 teaspoon Pepper
1 teaspoon Thyme
2 Eggs
Mix well.
In a very large bowl, put:
12 cups Bread Cubes
Celery Mixture
Broth Mixture
Mix well. Put in crockpot, cover and cook 1 hour on high, turn down to low and cook 4-8 hours. Check after 7 hours if you need more liquid. We usually it at it then!
*we use 2 cans of mushrooms because we like them so much. Also you can use fresh sliced mushrooms if you like and if you don't like mushrooms just leave them out.
