    Good morning. Hope you have good plans for this Veterans Day...

    I think I may have posted this before, but I found out that I can't get the jarred sauce at netrition for a while, and the cranberries are fresh, so here it is again!

    Sugar-Free Cranberry Sauce

    This is the simplest homemade cranberry sauce -- no spices, no orange peel, nothing extra. It is about the thickness of pudding. I use it not only with turkey, but to put over yogurt or ricotta cheese for breakfast or a snack, or accompanying cheeses and nuts as a dessert.

    Prep Time: 10 minutes

    Ingredients:

    • 1 bag of fresh cranberries (12 oz)
    • Sugar substitute equal to 1 cup sugar
    • 1 cup water
    • 1/4 teaspoon salt

    Preparation:

    1. Put cranberries in a pot on the stove, and pick through to remove soft and/or brown ones.
    2. Add the rest of the ingredients, stir, and bring to a boil on medium-high heat.
    3. Stir frequently. The cranberries will pop, and then release their "gel" -- and the sauce will come together like magic. Cook until the sauce is the consistency you want -- 5 to 10 minutes.

    Note: I used a liquid sweetener in this recipe, which added zero carbs. Powdered artificial sweeteners often use sugars as a base. For example, you could use one cup of Da Vinci's Simple Syrup instead of water. More information about liquid sweeteners1

    Makes 8 servings of cranberry sauce, each approximately 1/4 cup. Each serving has 3 grams of effective carbohydrate2 and almost 2 grams of fiber.
     
    So, that's on my to-do list today!

    Low Carb Pizza BItes

     

    Ingredients

     

     

    8-oz cream cheese

    2 eggs

    1 tsp garlic powder

     and oregano

    1/4 cup sugar free spaghetti sauce ( used Reg)

    1/2 cup shredded mozz cheese or a combo of cheese such as parm

    1/4 cup finely minced green pepper or other pizza topping

    24 slices of thin pepperoni, thin sliced type

     

    Oven set at 350.  Guide the pepperoni slices into each muffin pan, They will ruffle right into the cups and I found that no oiling of the pans worked.

     

    Cream the cream cheese well with a mixer. Add the eggs,and spices and beat till smooth.  Mix the rest of the ingredients in by hand.  Fill the lined muffin cups. Bake for about 15 -18 minutes.

     

    Remove and allow to cool on a rack. Run a knife around the bites for easy removeral.  Mine just lifted right out~

     

    I blotted each one on peper towels~   Truly awesome and this one will fly in many directions with great additions along the way~  Travel  ~ Janie

    Hi Margaret,

     

    I tried earlier to get on and had all kinds of trouble. I don't know if it's TOH or my computer. That was another great review but I think you're right about it appealing or not appealing to certain audiences.

     

    Looks like we have a very small audience here today also. I have checked a number of Rosie's recipes and they are usually all great. thanks for bringing it over.

     

    I'll check in later don't want to let this get long incase the BB doesn't let me post.

    Hi, Carol...thanks for joining me today...I felt as if I was talking to myself! Big Smile

    Oh, wow...is this cranberry sauce good! We had it with our rotisserie chicken tonight...and I think I'll get more cranberries- they have such a short season- and freeze them...maybe in half portions, so I can make it whenever I want...like Feb. or March!

    All this means is that I have to clean out our freezer downstairs- it's the top of our extra fridge, but it's useful! Now...I need to try not to freeze too much...once in a while I need reality to kick in...Embarrassed

    DD lives on a cranberry marsh and you know we didn't get so much as one berry this year. Both Roger and I passed on the info that we'd like some, they can eat canned for Thanksgiving. I will buy some and make sauce for Rog and I and won't share with the naughty children.Wink I use to make my own cranberry sauce when a neighbor kept me suppied with berries.

     

    This is a recipe that would be good for the holidays, if you want to serve it without the berries put it in custard cups no added carbs and break up some s/f starlight mints and have mint pudding or mousse for Christmas.

     

    I have to go watch DWTS to see who goes home tonight. See you tomorrow.

    WHIPPED ALMOND CREAM DIP For Strawberries


    2 pints fresh strawberries
    1 package vanilla instant pudding mix (s/f)
    2 cups heavy cream
    1 cup milk
    1/2 teaspoon almond extract

    DIRECTIONS:
    Wash strawberries (do not hull) and pat them dry; then chill.
    Combine the pudding mix and remaining ingredients in a large
    mixing bowl; beat at low speed with an electric mixer until
    blended. Beat at high speed until soft peaks form (about
    eight minutes). Serve with plenty of fresh strawberries.

    Just checked my Iowa email and there you were Margaret.  I like the flyladies...they set it up for the whole week, so I don't have to check in, just lazy, I guess.  the recipes sound good.  I need to work hard on low carb before the holidays!  We are watching dancing with the stars but the first part is just a repeat of last night's....so decided to check this out!  until tomorrow!

    Carol, I can't believe those kiddo's of yours didn't get some fresh cranberries to you this year.  Especially working on a cranberry marsh!  Yes, feed them the canned....but they might be tired of cranberries working on the marsh. How do you feel about the guy who got voted off of DWTS tonight?  I figured the right two were in the bottom so it really didn't matter which one of them went home.  Then I watched The Biggest Loser that I taped.  It was really good too!

    Well, I went to the doctor yesterday and he wants me to see a surgeon. So the quickest I can see him is next Tuesday.  I'm just having some off and on pain so it will be fine.  I'm pretty sure he is going to want to take out the gallbladder and I'm ready for it. Also, my cold is just going to have to run the coarse. Other than that, I feel fine.  lol

    Just wanted to say hi and hopefully I'll see you all tomorrow.
