ISO recipe for Safeway's tomatoe soup

     DH and i are hooked on it but it is pricey. Anyone have a version of it?

    I don't know how authentic this is, but I did find this.

    It does sound good.

    This is the Safeway recipe for their Tuscan Tomato Bisque. It's just slimmed down a little by cutting the cream. This signature soup is on my short list of all time favorites. The recipe was recently given to me and I havent made it yet, BUT I am a pretty darn good cook and by looking at it ... this will give you what you are looking for. Enjoy!

    SLIMMED-DOWN TOMATO-BUTTERNUT SQUASH BISQUE
    2 tablespoons butter or extra-virgin olive oil
    1 onion, chopped
    3 cloves garlic, minced
    1 (28-ounce) can whole tomatoes, with liquid
    1/4-1/2 cup roasted garlic tomato paste
    2 cups vegetable or organic chicken stock
    2-2 1/2 cups butternut squash, peeled and diced
    Salt and ground pepper to taste
    2 tablespoons fresh basil, chopped
    1/2 teaspoon dried thyme
    1 to 1 1/4 cups nonfat half-and-half or nonfat yogurt
    Several dashes of Tabasco or other hot pepper sauce

    In a large saucepan, saute onions and garlic in butter or oil over medium-low heat until soft and golden. Add tomatoes, tomato paste, chicken stock, butternut squash, salt, pepper, basil and thyme. Bring to a boil, then reduce heat. Partially cover and simmer for about 30-35 minutes, or until squash is fork-tender. Puree the soup in a blender, then pour back into the saucepan. Stir in nonfat half and half or yogurt, splash in the hot pepper sauce, and taste for seasoning. Heat the soup just to a boil, then ladle into bowls. Garnish with sliced basil leaves or minced parsley.
    Serves 6.

    Bumping for grammyof5.  Also found one on Just A Pinch.  The only difference between the two was using real cream instead of yogurt

    Thanks! I will definitely give this a try! If someone had told me that there was butternut squash in it, I would have thought they were pulling my leg! Now, I'm just really curious, so I HAVE to try it!!!!

    I'll let everyone know how it is. It might be a week or two before I can get to it, but I will post results here.

    I checked the ingredient list on this soup at Safeway today.  Butternut squash was closer to the top than I would have expected.  I did get a container to try (on sale and then 10% off day).  I put it in the freezer for later this month.
