Need some ideas for easy and tasty fillings for pinwheel appetizers, especially using cream cheese. Also looking for diabetic friendly recipes. And, what else can you use besides tortillas? Thanks! Paula
1 c. sour cream
1 pkg. cr. cheese
1/2 c. finely shredded cheddar
3/4 c. chopped gr. onion
1 tbsp. lime juice
1 tbsp. jalapeno
or sometimes I just sort of use a taco dip recipe.
The only other thing I can think of to use as a roll-up is lunch meat. Be creative with what you put in it.

These are the absolute BEST pinwheels I have ever had.
Everywhere I take them people ask for the recipe!
CRANBERRY FETA PINWHEELS
(from Sierra Vista
1 carton (8oz) whipped cream cheese, softened
1 c (8oz) crumbled feta cheese
1/4 c chopped green onions
1 pkg (6oz) dried cranberries
4 flour tortilla (10in)
In a small bowl, combine the cream cheese, feta cheese and
onions. Stir in cranberries. Spread about 1/2 c mixture over each tortilla
& roll lightly. (almost wrote tightly! yikes) Wrap with plastic wrap and
refrigerate for at least 1 hour. Cut each roll-up into 10 slices.
* Bet this might be yummy on crescent rolls too!

Prep time: 30 minutesChill time: 3 hours
I made some this weekend with deli turkey, cream cheese, whole cranberry sauce, and pecans with the tortillas. They were a hit at church.
If you didn't want to use the tortillas, you could spread the cream cheese and whatever else you use for the filling on meat (turkey/ham/or roast beef) and roll up. When I did, I didn't cut into pinwheels. Just left them as roll up snacks. They were a hit too.
