Need some ideas for easy and tasty fillings for pinwheel  appetizers, especially using cream cheese.  Also looking for diabetic friendly recipes.  And, what else can you use besides tortillas?  Thanks!  Paula

    How about:

    1 c. sour cream

    1 pkg. cr. cheese

    1/2 c. finely shredded cheddar

    3/4 c. chopped gr. onion

    1 tbsp. lime juice

    1 tbsp. jalapeno

or sometimes I just sort of use a taco dip recipe.

The only other thing I can think of to use as a roll-up is lunch meat.  Be creative with what you put in it.

    8 oz. dairy sour cream
1 (4 oz.) can diced green chilies (Drained)
    1/2 c. chopped green onion
    5 (10 oz.) flour tortilla
    8 oz. cream cheese
    1 c. grated Cheddar cheese
Garlic powder and salt to taste
1 (4 oz.) can chopped black olives
Mix all filling ingredients together, divide evenly and spread over tortillas, roll up, cover tightly with plastic wrap.
2 (8 oz.) pkg. cream cheese, softened
1 pkg. Hidden Valley Ranch Milk Recipe Original Ranch Salad Dressing Mix
    2 green onions, minced
    4 (12 inch) flour tortillas
    1/2 c. diced red pepper
    1/2 c. diced celery
1 can sliced black olives, drained
Mix first 3 ingredients. Spread on tortillas. Sprinkle on remaining ingredients. Then roll and wrap tightly in plastic wrap. Chill at least 2 hours. Cut as thick as you like - 1/2 to 1 inch slices.

These are the absolute BEST pinwheels I have ever had. Everywhere I take them people ask for the recipe!

    (from Sierra Vista Woman's Club)

1 carton (8oz) whipped cream cheese, softened

    1 c (8oz) crumbled feta cheese

    1/4 c chopped green onions

    1 pkg (6oz) dried cranberries

    4 flour tortilla (10in)

In a small bowl, combine the cream cheese, feta cheese and onions. Stir in cranberries. Spread about 1/2 c mixture over each tortilla & roll lightly. (almost wrote tightly! yikes) Wrap with plastic wrap and refrigerate for at least 1 hour. Cut each roll-up into 10 slices.

    * Bet this might be yummy on crescent rolls too!

Thanks, Suzamews!  I love cranberries and cream cheese and green onions!  Great holiday colors and flavors.  Not so sure about the feta...maybe bleu cheese would work!  But thanks for getting my creative juices flowing!  Paula

    I make these often.

1 package Azteca® Super Size Tortillas
2-8 oz. containers cream cheese, softened
    1/3 cup mayonnaise
    2 tablespoons chopped green onion
    1/4 cup chopped black olives
2 (2 1/2 ounce) packages sliced, pressed, cooked ham

    • Remove tortillas from refrigerator; let stand at room temperature while preparing filling.
    • Combine cream cheese, mayonnaise, onions & olives.
    • Spread a thin layer of cream cheese mixture on each tortilla.
    • Arrange four ham slices over cheese.
    • Tightly roll up tortilla.
    • Wrap individually in plastic wrap.
    • Repeat for all tortillas.
    • Refrigerate for at least 3 hours or overnight.
    • To serve, cut into 3/4" diagonal slices.
    • Makes approximately 64 pieces.

    Prep time: 30 minutes
    Chill time: 3 hours

I made some this weekend with deli turkey, cream cheese, whole cranberry sauce, and pecans with the tortillas.  They were a hit at church.

If you didn't want to use the tortillas, you could spread the cream cheese and whatever else you use for the filling on meat (turkey/ham/or roast beef) and roll up.  When I did, I didn't cut into pinwheels.  Just left them as roll up snacks.  They were a hit too.
