What do you serve with chicken fajitas?

  • What do you serve with chicken fajitas?
    We are having company for dinner and I'd like some side dish ideas to go with chicken fajitas. I thought about Mexican rice. Any other suggestions? Thank You Stacy

    I get a bag of mexican rice with the corn already in it and make that with black beans. Also some exotic fruit like mangos and papayas would be nice.

    I would do the rice or a side of beans. Plus some salsa and chips.

    MEXICAN RICE
    1 tablespoon oil
    (or to be authentic, bacon fat or lard)
    1 teaspoon whole cumin seed
    2 large cloves garlic
    salt to taste
    1 cup long-grain rice
    1/2 can diced tomatoes

    Heat oil or fat in medium heavy-bottomed saucepan with a
    tight-fitting lid.
    Meanwhile, place garlic, cumin, and salt in a mortar and grind to a paste.
    When oil is hot, fry garlic mixture until it turns slightly
    brown. This takes a very short time and can easily burn.

    Place the rice in a strainer and rinse well; add to garlic
    mixture in pan and fry until rice turns a light brown color.
    Add tomatoes and some of the juice, then add water to cover the rice by about 1 inch.

    Bring to a full boil, then reduce heat to lowest setting and cover tightly.
    Simmer for 20 minutes; do not stir or lift lid during this time.
    At the end of the cooking time, remove from heat and let sit,
    covered, for 5 minutes. Fluff with a fork.

    Mexican Black Beans
    2 Cups black beans, rinsed, cooked and rinsed (or 2 cans)
    1 TBS. Olive oil
    4 garlic cloves, minced
    1 large jalapeno, seeded and chopped (wear rubber gloves)
    ½ tsp. Cumin
    2 cups chicken broth
    1 lime
    Cilantro, fresh, chopped
    Jack cheese
    Salt and pepper to taste

    Heat oil in heavy large pan over medium high heat. Add garlic, jalapeno, and cumin and sauté 1 minute. Add beans, broth and cook 5 minutes, stirring occasionally. Coarsely mash beans with potato masher. Continue boiling until thick, stirring frequently, about 10 minutes. Season to taste with lime juice, salt and pepper. Sprinkle with cheese and cilantro.

    I usually do corn and then nachos or chips and dip and some fruit like watermelon and pineapple. Yum!

    In our area (SC Tex) it would be..
    Guacamole
    Salsa
    Tortilla chips
    Pinto beans
    Spanish rice

    SPANISH RICE

    1 cup uncooked long grain rice
    4 slices bacon
    1/4 cup chopped geen pepper
    1 cup onion, chopped
    2 cups chicken broth (or water)
    1 teaspoon salt
    1/4 teaspoon pepper
    1/2 teaspoon ground cumin
    1 can (2 cups) crushed or diced tomatoes

    In a large skillet (one with lid) fry bacon until crisp; drain on paper towels.
    Reserve 2 tablespoons of bacon drippings in skillet and add the rice, onion and green pepper. Cook until onion is tender.
    Add the remaining ingredients plus the bacon crumbled to the skillet.
    Cover and simmer 30 to 45 min. or until rice is tender and liquid is absorbed.

    This will make 5-6 servings

    If you like a spicy rice then you can replace the above tomatoes with a can of Rotel tomatoes and enough water to equal 2 cups
