    I have bananas that are over ripe and would like to make banana bread.  Looking for plain recipes, not banana choc. chip, etc. 

    Any recipes would be appreciated!

    This is my Mom's favorite banana bread.


    Mom's BANANA NUT BREAD by dutchmom4mi

    1-3/4 cups flour
    1 teaspoon soda
    1/2 teaspoon salt
    1 cup chopped nuts (walnuts OR pecans)
    1/2 cup shortening
    3/4 cup sugar
    2 eggs
    1 cup mashed bananas (about 3 bananas)

    -- Preheat oven to 350 degrees. Grease a 8 1/2" x 4-1/2" x 2-1/2 loaf pan.
    -- Stir together: flour soda, salt, and nuts. Set aside.
    -- Blend shortening and sugar until creamy. Mix in eggs. Add mashed bananas and dry ingredients. Blend well.
    -- Bake at 350 degrees for 50 to 60 minutes, or until toothpick comes out clean.

    I don't think I've seen one with my mom's "secret ingredient" (orange juice). EVERY time I make this people ask for the recipe. Not that you can go wrong with any kind of banana bread! It is extremely moist and yummy! Kim

    MOM’S BANANA BREAD by casslepier

    1 cup sugar
    2 tbsp. liquid shortening
    1 egg
    1 tsp. vanilla
    1/2 tsp. salt
    2 cups flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 cup orange juice
    2 large bananas
    1/2 cup nuts (optional)

    Mash bananas with fork. Pour in all other ingredients and mix. Grease and flour pans. Bake at 325 degrees for one hour. Makes 1 standard size loaves.

    Brown Sugar-Cinnamon Sour Cream Banana Bread by DivaSharon

    Preheat oven to 325 degrees

    3 cups flour
    1 cup white sugar
    ½ cup light brown sugar
    1 tsp. cinnamon
    ¾ tsp. salt
    1 ½ tsp. baking powder
    1 ½ tsp. baking soda
    3 Tbsp. vegetable oil
    3 eggs
    2 tsp. vanilla
    ¾ cup orange juice
    4 HEAPING TBSP. (1/2 cup) sour cream
    3-4 very ripe bananas
    1 ½ cups chopped nuts (optional)

    Combine dry ingredients. In another bowl, combine beaten eggs, oil, vanilla, orange juice and sour cream. Make a well in center of dry ingredients and mix in liquid ingredients. In small bowl, mash bananas with fork. Continue with hand mixer until pureed and as smooth as possible. Add to batter. Stir in nuts, if desired.

    Grease two 9”x5” loaf pans with cooking spray. Divide batter evenly. Pans will be about ¾ full. Bake for 45-50 minutes, checking after 35 minutes with wooden pick. Bread is done when pick comes out slightly wet, not too dry! Do not overbake! Cool in pans for 15 minutes, remove to wire rack and continue to cool. Wrap in plastic when almost cool. Bread will be moister the next day and be shiny/sticky on top.

    This is a simple banana bread (or muffin) recipe.  Every time I take it somewhere I have a request for the recipe.  Hope that you enjoy it as well! 

    Banana Bread 1 1/2 cups flour                         *Preheat oven to 325 degrees.

    1 tsp. baking soda                     *Combine flour, soda, and salt in med. bowl

    1/2 tsp. salt                              *Mix egg, sugar and butter.  Add mashed  1 egg beaten                               bananas and combine with flour mixture.1 cup sugar                              - 4 Tbsp. butter, melted                Bake at 325 degrees for 55-60 minutes

    3 ripe medium bananas, mashed         

     

    *Hint - put bananas in ziplock bag and mash with hands - snip off corner and add into egg/sugar/butter mixture

    This has been in our family for many, many years. The recipe can easily be cut in half.

     

     

    BANANA BREAD

     

    1 c shortening

    2 c sugar

    4 eggs 

    2 c crushed bananas

    4 c flour

    2 t soda

    1 t salt.

     

    Cream sugar and shortening.  Add eggs and bananas.  Sift together and stir in flour, soda, and salt. Pour into 2 greased 9 x 5 x 3 pans.

     

    Bake at 300° - 325° for 1 hour or until toothpick comes out clean.

    I'm not sure who posted this but I'ts the best banana bread I've ever eaten.

     Indescribably Delicious Banana Bread
    AKA Praline Soaked Banana Bread

    This is outstanding and makes two large loaves and I always ending up giving one to a neighbor. The topping is what really makes this so delicious. It truly is indescribable and comes from one of my favorite cookbooks, Necessities & Temptations from the Junior League of Austin. Enjoy! :O)

    Topping, put on after baking:

    6 tablespoons butter
    10 tablespoons dark brown sugar
    5 tablespoons milk
    1 cup or more, chopped pecans

    Batter:

    1 cup butter
    1 1/2 cups sugar
    2 large eggs
    4 very ripe bananas, mashed * or 1 3/4 cup mashed bananas
    1 teaspoon pure vanilla extract
    4 tablespoons buttermilk
    2 cups all purpose flour
    1 1/2 teaspoons baking soda
    1 teaspoon salt

    Preheat oven to 350° F.

    Cream butter and sugar. Mash bananas, beat 2 eggs and add to the bananas with vanilla and buttermilk; mix well and add to creamed butter and sugar.

    Sift together flour, soda and salt. Add to banana mixture, beat well.

    Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.

    Bake 45 to 50 minutes or until bread pulls away from sides of pan. Cool.

    To prepare Topping:

    Melt butter in saucepan. Add sugar and milk. Cook until very syrupy. Remove from heat and add chopped pecans. Pour over bread spreading to all the corners and place under broiler until bubbly and brown. Watch closely.

    Yield=2 loaves
