I have bananas that are over ripe and would like to make banana bread. Looking for plain recipes, not banana choc. chip, etc.
Any recipes would be appreciated!
This is my Mom's favorite banana bread. Mom's BANANA NUT BREAD by dutchmom4mi1-3/4 cups flour 1 teaspoon soda 1/2 teaspoon salt 1 cup chopped nuts (walnuts OR pecans) 1/2 cup shortening 3/4 cup sugar 2 eggs 1 cup mashed bananas (about 3 bananas) -- Preheat oven to 350 degrees. Grease a 8 1/2" x 4-1/2" x 2-1/2 loaf pan.-- Stir together: flour soda, salt, and nuts. Set aside. -- Blend shortening and sugar until creamy. Mix in eggs. Add mashed bananas and dry ingredients. Blend well. -- Bake at 350 degrees for 50 to 60 minutes, or until toothpick comes out clean.

Bread is done when pick comes out slightly wet, not too dry! Do not overbake! Cool in pans for 15 minutes, remove to wire rack and continue to cool. Wrap in plastic when almost cool. Bread will be moister the next day and be shiny/sticky on top.
This is a simple banana bread (or muffin) recipe. Every time I take it somewhere I have a request for the recipe. Hope that you enjoy it as well!
1 tsp. baking soda *Combine flour, soda, and salt in med. bowl
3 ripe medium bananas, mashed
*Hint - put bananas in ziplock bag and mash with hands - snip off corner and add into egg/sugar/butter mixture

This has been in our family for many, many years. The recipe can easily be cut in half.
1 c shortening
2 c sugar
2 c crushed bananas
4 c flour
2 t soda
1 t salt.
Cream sugar and shortening. Add eggs and bananas. Sift together and stir in flour, soda, and salt. Pour into 2 greased 9 x 5 x 3 pans.
Bake at 300° - 325° for 1 hour or until toothpick comes out clean.

Enjoy! :O) Topping, put on after baking:6 tablespoons butter10 tablespoons dark brown sugar5 tablespoons milk1 cup or more, chopped pecansBatter:1 cup butter1 1/2 cups sugar2 large eggs4 very ripe bananas, mashed * or 1 3/4 cup mashed bananas1 teaspoon pure vanilla extract4 tablespoons buttermilk2 cups all purpose flour1 1/2 teaspoons baking soda1 teaspoon saltPreheat oven to 350° F.Cream butter and sugar. Mash bananas, beat 2 eggs and add to the bananas with vanilla and buttermilk; mix well and add to creamed butter and sugar.Sift together flour, soda and salt. Add to banana mixture, beat well.Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.Bake 45 to 50 minutes or until bread pulls away from sides of pan. Cool.To prepare Topping:Melt butter in saucepan. Add sugar and milk. Cook until very syrupy. Remove from heat and add chopped pecans. Pour over bread spreading to all the corners and place under broiler until bubbly and brown. Watch closely. Yield=2 loaves
