    Posted this on another thread but didn't title it,so posting again.
    The Cake That Wont Last
    1 box white cake mix
    3 eggs,beaten
    1/3 cup vegetable oil
    1 tsp.vanilla extract
    1(20 ozs.)tin crushed pineapple(undrained)
    1 cup pecans
    2 cups coconut
    3 ripe bananas,well mashed
    Put all ingredients in a large bowl and let sit for about 5 minutes
    Do not beat mixture with a mixer.Stir by hand with a sturdy spoon.
    Spray with pam a 9x13 pan.Put mixture in prepared pan.Bake in 350ºoven approx.1 hour.
    Cream Cheese Icing:
    1 cup powdered sugar
    2-1/2 tbsp.melted butter
    4 ozs.cream cheese,softened
    1 tsp.vanilla
    Melt all ingredients in a medium saucepan on low heat till smooth.Spread on cooled cake.

    Yum, I made this a few hours ago and it is so moist and delicious. It doesn't need the frosting, but is good with it. The frosting is thin (almost sauce like.) I stirred my cake ingredients and then let them sit for 5 minutes.

    It looked awesome going in the pan, it's rising great. I subbed applesauce for the oil, if it seems dense enough as you said, I'm going to try to forgo the frosting. Save a few calories where I can, lost 60 lbs this past year, and am still trying for 30 more. should be out in about 15 minutes. Thanks for posting. Vicki

    Congratulations on the weight loss, Vicki. I hope you have a lot of family and friend's to help out with this cake. Don't you hate having to let cakes cool before you can eat them. lol.
