Lima Bean and Sauerkraut Salad2 cups of naturally fermented sauerkraut2 cups of cooked lima beans (if pressed for time, you mayuse canned or cooked frozen lima beans)1 head of Romaine, Boston, or Red lettuce, choppedMayonnaise dressingSalt and pepper to tasteThis is an easy salad to prepare and, since it containssauerkraut, is a good way to begin a meal as the tangytaste helps stimulate digestive juice flow. Drain thesauerkraut and pull apart with a fork. Combine well withthe beans. Stir in enough of the mayonnaise dressing tojust wet the salad. Spread over a bed of lettuce andserve. Serves 4-6.
