This soup is wonderful and so packed with flavor!!
My neighbor asked me when I was going to make this again. He loved it as much as we did. I love the new pictures you can see how fresh the veggies are. It's a fantastic recipe and I'm so glad I made it!! It's good with the chicken and without for those nights when you don't feel like eating meat. Thanks Carol I'll have to make this again soon, the parsnips are looking good at the market!
Woo hoo! Board seems to be moving a little better this morning :) Carol, this looks so good! I'd have to cut it down drastically or freeze it, sigh, Tim would run screaming from the site of so many veggies in one place. Thank you for the R&R&pic!

That's right Cyndy...I remember your neighbor falling in love with this soup just like we did. You're so right about it being wonderful with or without the chicken too. At least Bob got the picture taken BEFORE the orzo drank up a bunch of the broth! The parsnips look really good here too-at least that's one fresh vegetable that does!
I've never heard of parsley root, Renate....there's one new thing I learned today! I hope you'll give this a try-if you're a fan of parsnips, I think you'll like it.

Thank you Rosie...another parsnip fan......woo hoo!!!! I don't think this soup would be as special as it is without those in it. They give it that one more level of flavor. I hope if you give it a try, you love it as much as we do!
Oh yeah-it's OVER 30 degrees today....time to break out the t-shirts and shorts huh? Picnic on a snowbank? :) Snow coming in Tuesday though......I'm gonna enjoy EVERY minute of these temperatures and sunshine. :)
This is definitely going on my to try list...it looks so good! My mother used to always be so happy when she would find parsley roots for soup. Definitely gives it more flavor. Thanks for the recipe. I saw your other posts of soup and copied a couple of those, too!

Good Morning Janie....what a PERFECT way to describe the flavor of parsnips! I never quite know what to compare them to as I think they have a taste all their own which we love. As Cyndy said....this soup is great with OR without the chicken. Parsnip soup sounds interesting...

I hope you enjoy it should you decide to give it a try, Nancy. Funny story on the tureen. I got it at a church flea market........I had that and a couple baskets in my hand.....the cashier said "Is $2.00 OK?" I gave them $5.00..they were flabberghasted and tried to give me money back. NO WAY! Come to find out, the tureen was given to the sale by a lady I know that was running the bake sale I baked for-I was working a different table and she happened to notice the tureen behind me on the floor...she said "Did YOU buy that?" I told her I did and she was THRILLED! Too bad she doesn't have a computer-I could prove to her that it's being put to VERY good use....I LOVE it! My mother in law made sure to tell her that I'm using it and she's beyond happy.
