    Winter is the time for soup in this house....all kinds....all flavors....we could eat it every night of the week.
    I saw this recipe on Picky Palate.com last year.  I love Jenny's blog and always find great recipes there.  The minute I saw the ingredients, I knew I had to try it.  We love parsnips...I mean LOVE them.  My Dad used to grow them in his garden...he'd cover them in the fall with mulch and leave them in the ground all winter.  In the spring, as soon as the ground thawed enough, he'd dig them up.  They were SO sweet-almost like candy.  How we looked forward to the first meal with those on the side. I had never tried them in soup so was really anxious to do so.
    This soup is AMAZING.  It's thick...it's creamy...and in my opinion, the parsnips send this soup over the top. They add a nice background sweetness in combination with the heat of the jalapenos and Tabasco. I also love the addition of red bell pepper...it adds nice color and flavor.
    I don't get real technical measuring the vegetables....I usually eyeball the amount and it works out fine.  I do cut back on the amount of potatoes since the soup also contains pasta..2 cups of potatoes works out to be plenty for what we like. 
    Speaking of the pasta, it does tend to "drink up" some of the broth, so I usually keep an extra can at the ready to add when I want to reheat this the next day.  
    On a cold night, a bowl of this thick hearty soup definitely hit the spot!  It's one of the many that are in my "Keepers" binder...I go to it again and again.

    CREAMY CHICKEN, VEGETABLE, POTATO AND ORZO SOUP

    2 Tbsp. extra virgin olive oil
    1 1/2 c. diced parsnips
    3 large carrots, peeled and diced
    3 large stalks celery, diced
    1 medium onion, diced
    1 large red bell pepper, seeded and diced
    1 jalapeno pepper, seeded and minced (optional)
    4 cloves fresh garlic, minced
    1/2 tsp. kosher salt
    1/2 tsp. fresh cracked black pepper
    3 Tbsp. all-purpose flour
    3 (14 oz. each) cans chicken broth
    1 c. orzo
    4 c. diced potatoes (I cut down the amount of potatoes to about 2 cups-I use 4 small red potatoes, peeled and diced)
    2 dashes of Tabasco hot sauce (I use about 4 dashes-give or take)
    1/4 c. grated Parmesan cheese
    1 (14 oz.) can chicken broth
    2 boneless, skinless chicken breasts, cooked, then chopped (this is a great soup to use leftover roast chicken in too)
     
     
    Heat oil into a large Dutch oven over medium heat. Saute parsnips, carrots, celery, onion and bell pepper (and jalapeno, if using) for 8-10 minutes, stirring frequently. Add garlic, salt and pepper. Cook for 1 minute. Sprinkle in flour; stir and cook for 1 more minute. Slowly stir in 3 cans chicken broth. Increase heat to high, heat until soup starts to boil. Add orzo and potatoes; reduce heat to medium high and let cook for 8-10 minutes or until orzo is al dente and potatoes fork tender. Reduce heat to low; stir in another can of chicken broth. Season with Tabasco, Parmesan and additional salt and pepper to taste. Add the cooked chicken; simmer on low until ready to serve. 8-10 servings.

     This soup is wonderful and so packed with flavor!!

    My neighbor asked me when I was going to make this again. He loved it as much as we did. I love the new pictures you can see how  fresh the veggies are. It's a fantastic recipe and I'm so glad I made it!!  It's good with the chicken and without for those nights when you don't feel like eating meat.  Thanks Carol I'll have to make this again soon, the parsnips are looking good at the market!

    Carol,thanks for the recipe.I love parsnips and I put them in some of my soups too. I also was able to get parsley roots ( Petersilienwurzeln),which look similar like parsnips, in our store.They are great in soups also. Renate

    Good Morning All!

     

    That's right Cyndy...I remember your neighbor falling in love with this soup just like we did.  You're so right about it being wonderful with or without the chicken too.  At least Bob got the picture taken BEFORE the orzo drank up a bunch of the broth!  The parsnips look really good here too-at least that's one fresh vegetable that does!

     

    I've never heard of parsley root, Renate....there's one new thing I learned today!  I hope you'll give this a try-if you're a fan of parsnips, I think you'll like it.

     

    Jolene....you crack me up....I can picture Tim running in terror now....kind of like Bob running from peas....ha ha ha!!!

    Thank you Rosie...another parsnip fan......woo hoo!!!!  I don't think this soup would be as special as it is without those in it.  They give it that one more level of flavor.  I hope if you give it a try, you love it as much as we do!

     

    Oh yeah-it's OVER 30 degrees today....time to break out the t-shirts and shorts huh?  Picnic on a snowbank?  :)  Snow coming in Tuesday though......I'm gonna enjoy EVERY minute of these temperatures and sunshine. :)

    This is definitely going on my to try list...it looks so good!  My mother used to always be so happy when she would find parsley roots for soup.  Definitely gives it more flavor.  Thanks for the recipe.  I saw your other posts of soup and copied a couple of those, too!

    Enjoy!  I'm glad you found some new soup recipes to try, Carole.  I'm always on the lookout for new soups.  All I need to do is block out some time to go through some of these cookbooks of mine with the MANY dogeared pages...I'm sure I'll find something new to try!

    Wow  Carol,  What a beauty ~  and sooooo healthy, even with that little bit of orzo in there ~  Thanks  for everything ~  We too love  the woody taste of parsnips  and I have  agreat recipe for parsnip soup that I got off of the  Food Net work years  ago  Cooking Monday through Friday with Michelle Urvwalter??  Something like that ~  Hmmmmm wonder  if I posted it  ~

    Good Morning Janie....what a PERFECT way to describe the flavor of parsnips!  I never quite know what to compare them to as I think they have a taste all their own which we love.  As Cyndy said....this soup is great with OR without the chicken.  Parsnip soup sounds interesting...

    I hope you enjoy it should you decide to give it a try, Nancy.  Funny story on the tureen.  I got it at a church flea market........I had that and a couple baskets in my hand.....the cashier said "Is $2.00 OK?"  I gave them $5.00..they were flabberghasted and tried to give me money back.  NO WAY!  Come to find out, the tureen was given to the sale by a lady I know that was running the  bake sale I baked for-I was working a different table and she happened to notice the tureen behind me on the floor...she said "Did YOU buy that?"  I told her I did and she was THRILLED!  Too bad she doesn't have a computer-I could prove to her that it's being put to VERY good use....I LOVE it!  My mother in law made sure to tell her that I'm using it and she's beyond happy.
