    Ok, I don't eat much any more but I bet most of us had it growing up.

    I was amazed at how inventive the recipes I found were.

    (2 servings)

    8 slices bologna
    3 eggs
    2 Tablespoons milk (soy milk works fine)
    2 Tablespoons onion -- finely chopped
    3 ounces american Cheese -- chopped
    skillet
    muffin tin


    Heat 6 slices of the bologna in an ungreased skillet until the centers puffs.

    Place each heated bologna in a lightly greased muffin cup. Chop the remaining 2 slices of bologna into small pieces.

    In a small bowl, beat eggs with the milk. Stir in the chopped bologna and onion. Pour egg mixture into bologna cups. Bake uncovered at 350 degrees for 15 to 20 minutes or until eggs are set. Sprinkle with the cheese. Bake for a couple minutes longer until cheese melts.

    Cook Time: 3 hours 10 minutes
    Yield: 6 to 8 servings

    1 (3-pound) bologna
    1 cup canola oil
    1 loaf Texas toast, sliced 1-inch thick
    Prepared cole slaw, for topping
    Your favorite BBQ sauce, for drizzling


    Prepare a smoker.
    Using a large, 2-pronged fork, poke several holes into bologna. Place bologna in the smoker and smoke for 3 hours over indirect heat, or until ends of bologna start to swell.

    Pour oil into a heavy bottomed medium-size frying pan. Heat oil to 350 degrees F.

    Cut bologna into 1/2-inch to 1-inch thick slices. When oil is hot, fry bologna slices, 1 at a time, for 1 minute each. Remove each slice to a paper towel-lined plate to drain. Place each slice of bologna between 2 pieces of Texas toast, first topping with a small scoop of cole slaw and then drizzling with BBQ sauce.

    PICKLED BOLOGNA

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 c White vinegar
    1/2 c Water
    1/4 c White sugar
    1/8 ts Salt
    1 tb Mixed pickling spices
    1 md Onion, sliced
    1 Ring bologna, cut into
    -2-3 inch pieces


    Mix together first 5 ingredients and boil for 8 minutes; cool. Put bologna and onions in large glass jar. Pour vinegar mixture over bologna. Refrigerate overnight before serving. Store in refrigerator.

    Bologna Spread

    3 medium sized potatoes
    4 oz. cream cheese
    1 Tablespoons parsley
    1 Tablespoon Butter
    1/4 Cup Chopped Sweet Bologna


    Cook Potatoes Until soft. Drain off water & Mash. Add salt, pepper, butter and parsley. Add cream cheese and mash until smooth. Then add chopped sweet bologna. Serve hot or cold on crackers.

    Homemade Ham Salad

    2 cups ground, cooked ham (I have replaced this with bologna sometimes)
    3 small ribs celery, diced fine
    1 large dill pickle
    1 1/4 tsp. dry mustard
    1/4 tsp onion powder
    1/2 cup mayonnaise
    1 Tbls. lemon juice
    1/2 tsp. salt

    Chop ham (or bologna) and grind through a hand-grinder or electric food processor. Pack ham firmly into each cup and then put into a bowl. Then cut celery, and pickle with a sharp knife and add into ham. In a separate bowl, add dry mustard, onion powder, mayonnaise, salt, and lemon juice and stir. Additional mayonnaise may be added to suit your taste. Then stir this mixture into the ham. Mix and spread onto sandwich bread. Ham salad tastes even better the next day after being refrigerated overnight. Makes one pound of salad.

    This is a warming, tasty soup perfect for a chilly day. Great with fresh warm bread.

    Cook Time: approx. 1 Hour 10 Minutes. Ready in: approx. 1 Hour 30 Minutes. Makes 8 -10 servings.

    1 onion, peeled
    2 (15 ounce) cans cut green beans, with liquid
    1 1/2 pounds bologna, cut into pieces
    8 potatoes, peeled and cubed
    4 quarts water
    salt to taste
    ground black pepper to taste
    1/2 cup cornstarch
    1/2 cup cold water


    1 Place water in a 6-quart (or larger) pot. Bring to a boil. Place whole onion and bologna into the water and boil for 30 minutes, adding more water as needed.
    2 Add potatoes and cook until tender.
    3 Remove onion and add the beans. Whisk the cornstarch and cold water together and also add. Cook until thickened.

    I still enjoy a good bologna, tomato, lettuce, and mayo sandwich for lunch occasionally. Had these for school lunches many moons ago when I was a kid, and still get a craving for them yet. With a big tall glass of milk! (1% milk fat, of course)

    1 Tbsp. MIRACLE WHIP Dressing
    1 slice CLAUSSEN Kosher Dill Sandwich Slices


    CUT bologna slices into very thin strips.

    SPREAD bun with salad dressing. Fill with bologna and pickle.

    1 lb. Sliced bologna
    2 Tbsp. Grated onion
    1 pkg. Cream cheese (8oz.), softened
    1 Tbsp. Worcestershire sauce
    1 pkg. Ritz crackers


    Mix softened cream cheese, onion and Worcestershire sauce. Beat well. Place a slice of bologna on a plate, spread cheese mix on. Repeat process until all bologna is used. Ice like a cake with rest of cheese mixture. Cool in refrigerator. Slice in thin slices and serve on crackers.

    Harvard Hot Cheese & Bologna Sandwich


    3 – tablespoon mayonnaise or salad dressing
    1/2 - cup chili sauce
    1 – pound bologna, ground
    1/2 - cup Velveeta cheese, cubed
    1/3 – cup onions, chopped
    1/2 - cup stuffed olives, chopped
    8-10 – potato rolls


    Preheat oven 400-degrees.

    In a small mixing bowl, blend the mayonnaise (or Miracle Whip) and chili sauce.
    Add the bologna, Velveeta, onions, and olives.
    Cut rolls in half and spread bologna mixture on each roll.
    Wrap each roll in aluminum foil and bake for 10 minutes.

    12 slices bologna
    2 eggs
    1/2 c. biscuit mix
    1/2 c. shredded sharp cheese
    1/4 c. sweet pickle relish
    1 c. milk

    Place bologna slices in lightly greased muffin tins to form cups.
    Mix together remaining ingredients. Pour into bologna cups. Bake
    at (400F) for 20-25 minutes or until golden.

    Amount Ingredient
    12 slices Bologna
    Filling
    1/2 package (6 ounces) cream cheese
    3 tablespoons finely chopped chives or green onions
    1 tablespoon ketchup
    1 tablespoon Worcestershire sauce
    Fresh lettuce leaves
    Cherry tomatoes


    1. Let Bologna sit at room temperature for about 1/2 hour. Have cream cheese at room temperature as well.
    2. Stir cream cheese until soft and smooth.
    3. Add chives or green onion, ketchup and Worcestershire sauce. Stir to combine.
    4. Place Bologna slices on sheets of waxed paper.
    5. Spread filling on each slice. Roll up, jelly roll fashion.
    6. Wrap each roll in waxed paper or plastic wrap.
    7. Let sit in refrigerator for at least 2 hours. Or chill in freezer for about 30 minutes.
    8. With a very sharp knife, cut rolls in even slices.
    9. Place on a bed of lettuce leaves. Garnish with cherry tomatoes. Serve as appetizers.

    Liver Sausage Bologna Loaf

    2/3 lb bologna
    2 tbsp chili sauce
    4 tbsp mayonnaise
    1 tbsp lemon juice
    2/3 lb liver sausage
    3 tbsp dill pickle, minced
    4 tbsp celery, chopped
    2 tsp onion juice
    1 tbsp worcestershire sauce
    1 loaf unsliced bread
    3 tbsp butter
    3 slice bologna
    3 slice liver sausage
    1 tomato wedges
    1 stuffed olives


    Put bologna through food chopper; add chili sauce, 2 tbsp mayonnaise,
    and lemon juice; mix to a smooth paste. Mash live sausage; add
    pickle, celery, onion juice, Worcestershire sauce, and remaining
    mayonnaise; mix to a smooth paste. Cut crust from bread, slice in 3
    lengthwise slices. Place one slice on baking sheet and spread with
    bologna paste; top with second slice of bread; spread with liver
    sausage paste. Top with remaining slice of bread. Spread entire loaf
    with butter. Arrange alternate slices of sausage/bologna on top. Bake
    in moderate oven (350~) 30 mins. Garnish with tomatoes and stuffed
    olives.

    Spitted Bologna With Kraut

    Makes 8 servings

    2 15 oz cans well-drained BUSH'S BEST Sauerkraut,
    1/2 cup firmly packed dark brown sugar
    2 tablespoons flour
    1/2 cup catsup
    1 tablespoon soy sauce
    1 clove garlic, crushed
    1/4 teaspoon ground ginger
    2 pounds bologna, in 1 piece
    Dash pepper


    In medium saucepan mix together: sugar, flour, catsup, and seasonings. Drain kraut juice into saucepan. Stir over medium heat until sauce boils 1 minute. Remove from heat. Score bologna and skewer onto rotisserie spit. Brush with some of the barbecue sauce. Roast in rotisserie 25 to 30 minutes at 350° or according to range manufacturer's directions, brushing twice with sauce. Add kraut to remaining sauce and cook about 10 minutes. Serve bologna on kraut mixture.
