Absolutely beautiful, Carol!!!
LOL.....the weather here in up sate NY has been less than stellar...cold and windy....snow showers on the hill tops either last week or the week before.....I wanted to make soup....and I've had my heart set on your beef barley soup you posted....the one in that beautiful white soup terrine (?)....so last week I went and bought the makings to do just that....well...as luck would have it...Michael got called out of town and I had to freeze the meat and regroup......
Now the weather here is back to summer....but that could change on a moments notice....So I'll definitely keep this recipe with the beef barley one....even July has been known to be "iffy" here....but I'm with you....soup is good food anytime!!
I can't wait to try both of your recipes!!!.....and the beef is in the freezer as I type!!

Hi Twila....We're getting some perfect spring weather here in MA.....can't really complain about this spring overall-it's been a LOT nicer than the ones we've had the past few years. I have all my windows open today letting the fresh air---and pollen-----blow in! :) Oh do I know about the blink and the weather changes here in the Northeast! Winter to summer and back in a heartbeat!
We love that Beef and Barley Soup too-I make that a lot-and I love all my tureens. This soup never made it into a tureen....Bob got home late the first night I made it so I served it up right from the pot on the stove. No matter-still tasted WONDERFUL! Hope you enjoy both recipes.

Hi Jill! We don't have AC here-but we do have a huge screened in porch and love eating out there. I don't stop making soup after winter leaves......we have it all year and enjoy it. I look at it this way....meat, potatoes and vegetable are a hot meal....what's the difference? Coffee's hot and we have that every morning...........maybe crazy logic but it works for us.
My daughter got me this set of dishes quite a few years ago......I don't think I've actually eaten off of them-they look pretty in the hutch though-and Bob likes them for photos-so we DO use them a lot...........just not for meals. :)

Carol, this is a must for me to try. The recipe ounds easy to prepare and if that wasn't enough, the picture is jumping off the page waving to me!
Both my DH and I were born and raised in Michigan, so we grew up with soup always on the table. However, 27 years ago we moved to Florida and were laughed at because of liking/eating soup. Haven't let that stop us yet! Yesterday it was 94 and we were finishing up a pot of vegetable soup.
.I think this will be on the menu for either next week or the following. Can't wait to give it a try! I think I'll look for your Beef Barley recipe as well.

Hi Lori-this recipe sure IS easy! I always have the basics for Southwestern dishes in the house so I know I'll be making this a lot as a I-don't-know-what-to-have-tonight dinner. Like I said before hot soup or hot meat and potatoes...makes no difference to me when I eat soup-love it all the time.

The ingredients in this soup look right up our alley. DH and I love anything Mexican so I will be trying it soon.
A few days ago I made turkey soup as the weather has not been spring like at all....cold, rainy and windy so soup is still on the menu. Where oh where is the warm weather?

Liz, I know what you mean about the fickle weather....one minute hot......one minute cold, rainy and raw.......that's why I say any day is a good day for soup here. The warm weather will arrive eventually and stay.............maybe? Ya just never know, do you? Sure does keep life interesting. Oh well.........here's to more new soup recipes to try-I'm always copying them for a rainy day.......LITERALLY! :)
