Combine ground beef and seasoning mix in large skillet. Cook over medium heat, stirring occasionally, for 2 to 3 minutes. Set aside. In a medium sized glass bowl, combine Velveeta with milk, and cook for 1 minute bursts, stirring after each minute, until cheese is melted and blends smoothly with milk. Combine with cooked elbow macaroni, sour cream and salsa. Spread 1/2 of this mixture over bottom of 8-inch-square baking pan that has been prepared with non-stick cooking spray. Top with 1/2 beef mixture. Spread remaining mac n'cheese mixture over top of beef mixture, top with remaining beef mixture, then top with crushed tortilla chips. Cover with shredded cheese. Sounds wonderful and very "fallish". I'm with Jillie, I've been craving a good mac and cheese recipe lately as well. We finally have a very rainy & cool day - 70! (with a high of only 82 - wahoooo!). Love this weather and it really makes me want to bake something.
