Recipe: Fresh Spinach Quiche

  • Recipe: Fresh Spinach Quiche

    I found this "sort of" recipe for spinach quiche on this blog http://www.simoneanne.com/journal/2010/12/food-spinach-quiche-and-the-trials-of-a-pre-made-pie-crust/

    and althought it doesn't give exact amounts think it sounds different and deliciuos. It uses fresh Mozzarella for the cheese and no cream or milk. She used a prepared whole wheat crust but you could use any crust. I just need to get more spinach and fresh Mozzarella. chefly

    Fresh Spinach Quiche

    Ingredients: Whole wheat pie crust, about a pound of fresh spinach, four cloves of garlic, three eggs, one large ball of fresh mozzarella cheese, some curry powder (optional), onion, olive oil, salt and pepper

    Directions: Preheat the oven to 350 degrees. Sauté the chopped onion and sliced garlic in olive oil until the onion is soft and the garlic lightly browned. Add the fresh spinach a few handfuls at a time, allowing it to wilt down. Add about two teaspoons of curry powder, or to taste. Or leave it out if that’s how you feel about it. :) Beat three eggs in a medium sized bowl. Slice the mozzarella. Add the spinach mixture to the eggs and stir well to combine evenly. Put half of the spinach and egg mixture in the pie crust and lay out the slices of cheese on top. Add the rest of the spinach and egg mixture so that the pie crust is filled to the top. Bake for twenty minutes (approximately) until the quiche is firm and the center is cooked. If it’s not fully cooked you’re worried about burning the crust you can wrap the edge in aluminum foil to prevent burning while still allowing the center to cook through.

     Good Morning Janie,

    I bet minis would work great. You could even use the mini mozzarella balls and not cut them. Let me know if you make them.

    The wind is just whipping outside but we only have light snow falling and I can still see grass poking out through the snow. Our forecast is still only about 3 inches. I'm so happy we aren't getting dumped on!

    Glad that blizzard didn't hit ~  Its  raining dogs &  cats back in Jersey ~  temps  aren't bad 40. but they will be dropping rapidly through out the day . By tomorrow it will be in the 20's  like 24 ~  Brrrrrrrrrrrrr.

     

    I'd freeze even inside my own house ~  I swear I'd never get dressed~  lol  I'd just drag a big old blanket around me all day ~  lol~   Janie

     We are supposed to have a high of 13ºF. today and I have to go shovel. Brrr. I'll keep thinking of a hot cup of coffee.Big Smile
