EXCELENT vegetable casserole!!! Tried the Cauliflower last Christmas and this year made it with Asparagus. Hard to say which was better. Family gave this a 10.
Dorothy's Cauliflower or Asparagus Casserole
1 medium head cauliflower or 2 bags frozen asparagus (cut in 1/3's) or -- broken into florets
3/4 cup sour cream
1/2 cup milk
1 tablespoon (to 1 1/2 T.) flour
1/2 cup (to 3/4C.) shredded cheddar cheese (used swiss cheese with asparagus)
1/2 cup crushed cornflakes (I used french fried onions)
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper (opt., used for Christmas)
1/4 cup onions -- chopped
1 teaspoon salt
pinch of sugar
1/4 cup grated Parmesan cheese
Place cauliflower or asparagus in a small amount of water in a saucepan; cover and cook for 5 minutes or until crisp-tender. Drain well. Saute the onions and peppers in butter for 3 to 4 min., add the flour then the milk and sour cream, stirring constantly, boil for 2 min. Remove from the heat, stir in cheeses, til melted; then combine with the cauliflower (asparagus),.cornflakes (or crushed french fried onions, and salt. Transfer to a greased 2-qt. baking dish. Sprinkle paprika and some french fried onions on top. Bake, uncovered, at 325' for 25-35 minutes or until heated through.
