I'm looking for some good desserts or snacks that don't require refrig to take along on camping trips or picnics. Got any good ones? I'll post one to get us started...

    CHOCOLATE CHIP CAKE
    1 yellow cake mix
    1 box(lg) instant vanilla pudding
    1 cup water
    1/2 cup oil
    1 German Chocolate Bar, grated
    6 oz. bag choc chips
    4 eggs
    powdered sugar

Mix cake, pudding, water, oil, eggs and half of grated chocolate. Mix 3 minutes. Add choc. chips. Bake at 350 for 35-45 minutes.

Remove cake from oven, sprinkle on remaining grated chocolate. After cake has cooled completely, sprinkle with powdered sugar.

I love this recipe and have used it many times!! It makes moist muffins that pack well when we are on the go. I don't ever have leftover oatmeal, but make some with 1/2 rolled oats with 1 cup boiling water poured over. Let it sit for a few minutes till it cools off a bit. I always double the recipe and cut back a little on the sugar as it's quite sweet.

Sometimes we omit the raisins and have this with a caramel frosting too!

    LEFTOVER OATMEAL MUFFINS
    1 cup flour
1 cup brown sugar -- packed
    1 teaspoon baking powder
    1 teaspoon baking Soda
    1/2 cup vegetable oil
    2 eggs -- beaten*
    1 cup left-over oatmeal
    1 cup raisins
    1 teaspoon vanilla

In a large bowl, combine flour, brown sugar, baking powder and baking soda.
In a second large bowl, combine vegetable oil, eggs, oatmeal, raisins and
vanilla. Add wet ingredients to dry ingredients and stir just enough to
moisten the dry ingredients (batter will be thin and lumpy). Pour into 12
greased or lined muffin tins. Bake at 350 degrees F for 18 - 20 minutes or
until muffins test done with a toothpick inserted into middle of muffin.

    here's a couple of ideas
Somores if you need recipe just post it.
cut up angle food cake, put on a stick, roll it in bowl of sweened condensed milk, and then roll in coconut. Hold over fire till good and hot. (NOT BURNED)
next don't remember what thses were called, but easy to make.
use 1 bananna per person. pull peel down on one side. then cut a V shape down that part of the bananna, and lift it out. then put pieces of hurshey bar and marshmellow in the V shape. pull the peel back up and place in foil. put on coal till bananas are hot and choc and Marshmellows are melted.

I'm remembering these from my girl scout days. and yep that is a long time ago.

I made this for one of our camping trips last summer and it seemed like a perfect hit. My family loved it.

    "Garbage"
    1 box Honey Graham Chex
1 box Teddy Grahams (honey or chocolate)
    1# plain M&Ms
    1 can honey roasted peanuts.

Mix together. Store in air tight container.

(I have had trouble finding the honey graham chex; perhaps it isn't even on the market. I just choose another kind of chex--a plain honey one I believe is the one we like.)
