    Cheesecake Filled Chocolate Covered Strawberries

    What a yummy way to eat strawberries! Who doesn't like chocolate and cheesecake?


    What You Need

    Whole Strawberries
    Philadelphia Ready-To-Eat Cheesecake filling (found in a tub in the cream cheese section)
    Good Quality Dipping Chocolate


    What You Do

    Carefully wash strawberries and pat dry with paper towels. Remove the stems from the berries. Using a small paring knife, core the center of each berry being careful to leave the bottom in tact.

    Fill a plastic baggie with the cheesecake filling. Fill each berry with cheesecake continuing on top of berry with a pretty design.

    Line a small baking sheet with wax paper.

    In a microwave-safe bowl, melt dipping chocolate at 30-second intervals until chocolate is smooth and creamy. Dip each strawberry into chocolate, covering 3/4 of the berry. Lay on baking sheet. Fill a second plastic baggie with chocolate and drizzle over the berries in a pretty design. Chill. Bring to room temperature before serving.

    Store in a sealed plastic container in the refrigerator.

    Easy Mexican Casserole

    Mexican cuisine is one of my favorite foods and you will see several mexican dishes throughout my recipe box! Yummy!


    1 pound lean ground beef
    2 cups salsa
    1 (16 ounce) can chili beans, drained
    3 cups crushed tortilla chips
    2 cups sour cream
    1 (2 ounce) can sliced black olives, drained
    1/2 cup chopped green onion
    1/2 cup chopped fresh tomato
    2 cups shredded Cheddar cheese


    Preheat oven to 350 degrees F (175 degrees C).

    In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.

    Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.

    Bake in preheated oven for 30 minutes, or until hot and bubbly.

    Pizza Pasta Casserole

    My family loves this casserole! It smells wonderful while it is baking! I love baking casseroles and I'm sometimes called the "Casserole Queen"


    1 pound ground beef
    1 8-ounce package spiral pasta, cooked and drained
    1 28-ounce jar spaghetti sauce
    2 cups (8oz) shredded mozzarella cheese
    Sliced pepperoni


    In a large skillet, cook beef and onion until meat is no longer pink; drain. Stir in spaghetti sauce & pasta.

    Transfer to 13x9x2 inch baking dish. Sprinkle with cheese. Arrange pepperoni over the top.

    Bake casserole, uncovered at 350 degrees for 25-30 minutes or until heated through.

    Pork Chops With Fresh Tomato, Onion, Garlic & Feta Cheese

    I love finding new recipes for pork chops and this dish is delicious!


    2 tablespoons olive oil, divided
    1 large onion, halved and thinly sliced
    4 pork loin chops, 1 inch thick
    salt to taste
    black pepper to taste
    garlic powder to taste
    1/2 pint red grape tomatoes, halved
    1/2 pint yellow grape tomatoes, halved
    3 cloves garlic, diced
    1 tablespoon dried basil
    A few sprinkles balsamic vinegar
    4 ounces feta cheese, crumbled


    Heat 1 tablespoon oil in a skillet over medium heat. Stir in the onion and cook until golden brown. Set aside.

    Heat 1/2 tablespoon oil in the skillet. Season pork chops with salt, pepper, and garlic powder, and place in the skillet. Cook to desired doneness. Set aside and keep warm.

    Heat remaining oil in the skillet. Return onions to skillet, and stir in tomatoes, garlic, and basil. Cook and stir about 3 minutes, until tomatoes are tender. Mix in balsamic vinegar, and season with salt and pepper.

    Top chops with the onion and tomato mixture, and sprinkle with feta cheese to serve.

    Cherry Marshmallow Cake

    Here is another cherry recipe I made and it is yummy and very easy to make!


    1 (18 1/4 ounce) box packaged yellow cake mix
    4 cups miniature marshmallows (about 3/4 of 10 1/2 oz package)
    1 (21 ounce) can cherry pie filling


    Preheat oven to 350°F.

    Grease a 13x9x2 inch baking pan.
    Prepare cake mix according to package directions.
    Spread marshmallows in the bottom of the baking pan, pour cake mix over marshmallows, spoon cherries evenly on top.
    Bake 30 to 40 minutes or until an inserted toothpick comes out clean.

    Cool before serving.

    The cherries will migrate to the bottom of the cake and the marshmallows to the top.

    Country Chicken Skillet

    This chicken dish is so creamy and delicious! The Knorr dip mix is a bit salty so I wouldn't add salt until you taste the final process!


    2 tablespoons margarine or butter
    1-1/2 pounds boneless, skinless chicken breast- cubed
    1 cup water
    1 package Knorr Recipe Vegetable Soup, Dip and Recipe Mix (Or Liptons)
    1/2 cup sour cream

    In 12-inch nonstick skillet, melt butter over medium-high heat and brown chicken, turning occasionally, about 5 minutes.

    Combine water and soup mix; stir into skillet. Bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasionally, 10 minutes or until chicken is thoroughly cooked.

    Stir in sour cream until heated.

    Serve over noodles or rice if desired. (I didn't)

    Cheesy Chicken Pizzaiola Sandwich

    What a great chicken sandwich! We really enjoyed these!


    1 1/4lb boneless skinless chicken breast -- cooked & shredded
    3 Tablespoons olive oil
    1 cup yellow onion -- finely chopped
    2 garlic cloves -- minced
    1 1/2 cups tomato sauce
    1/2 cup dry red wine or chicken broth
    1/2 teaspoon salt
    1 1/2 teaspoons dried oregano
    1/2 teaspoon dried basil
    1/4 teaspoon garlic powder
    1/8 teaspoon crushed red pepper flakes
    6 hoagie rolls -- split & toasted
    provolone cheese or shredded mozzarella & shredded parm, romano and asiago blend
    16 spinach leaves -- fresh


    In a large saucepan, sauté the onion and garlic in oil until soft but not browned. Add tomato sauce, wine, oregano and basil. Season with salt and red pepper flakes, adding more to taste, if you wish. Lower heat and simmer mixture for 30 minutes.

    Add garlic powder and shredded, cooked chicken to the tomato sauce; simmer together for 15 to 60 minutes, as desired (cover mixture if it begins to become too thick).

    Assemble sandwiches: spoon the chicken mixture on 4 toasted hoagie roll bottoms and place 2 provolone cheese slices on the top portion of each sandwich.

    Place open-faced sandwiches on a cookie sheet in a 350 degree oven until cheese melts (or broil if you like browned cheese). Place 4 spinach leaves on each sandwich, put together, and serve hot.

    This is a wonderful ham recipe! I love making this dish and my family gobbles it down!


    1 small onion, finely chopped 
    2 cups cooked ham, julianned cut 
    2 tablespoons butter, margarine, or oil
    1 can Cream of Mushroom soup (I used Cream Of Chicken)
    1/2 cup milk
    1 1/2 cup shredded cheddar cheese, divided
    2 cups hot cooked macaroni
    1/4 cup buttered fine bread crumbs (I used Garlic Butter Croutons, crushed)


    Heat oven to 350°.

    Spray a baking dish with cooking spray. Cook onion and ham in the butter until onion is tender but not browned.

    Add soup, milk, and 1 cup of the cheese. Stir until the cheese melts.

    Remove from heat and mix in macaroni. Pour into the prepared baking dish.

    Sprinkle with the remaining cheese and crumbs.

    Bake until bubbling hot all through, about 30 minutes.

    Charli's Sesame Chicken

    I have been making this dish for several years and it is delicious! I got this recipe from the late Charli who passed away last year!

    **Note: Don't follow the directions on the seasoning mix packet. Follow this recipe.

    2 large boneless, skinless chicken breasts
    2 to 3 tbsp canola oil (I used extra virgin olive oil)
    1 package Sunbird Honey Sesame Chicken Seasoning Mix
    1/4 cup water
    1/2 cup dark brown sugar
    1 tsp sesame seeds
    1 tsp sesame oil
    2 tsp chopped green onion
    1/2 tsp red pepper flakes
    1/2 cup cashews (whole or chopped, your preference)
    8 oz crushed pineapple or pineapple tidbits( if desired)


    Cut Chicken breasts into one inch cubes. Brown in skillet in canola oil over medium heat.

    Meanwhile, in a medium sized bowl, place Seasoning Mix. Add water and brown sugar. Mix well.

    Add sesame seeds, sesame oil, chopped green onion, and red pepper flakes. Mix well. Add cashews. Set aside.

    When chicken is browned, drain oil and leave chicken in skillet. Pour seasoning marinade over chicken and mix well. Bring back to a good simmer over medium heat and simmer for 7 minutes.

    If using pineapple, add about 2 or 3 minutes from being done, just to warm it. Mix well.

    Serve over rice or chow mein noodles.

    Hammy Hashbrown Casserole

    This dish is great as a side dish or a main meal which is the way I serve it! Very filling!


    1 (2 pound) package frozen hashbrown potaoes with peppers & onions, thawed
    8 oz. sour cream
    1 (10.75 oz.) can cream of chicken soup
    2 cups shredded cheddar cheese
    2 cups diced ham
    1/2 cup grated parmesan cheese
    1 cup French's fried onions


    Preheat oven to 375 degrees. Spray a 9x13 pan.

    In a large bowl, combine, potatoes, sour cream, soup, cheddar cheese and ham. Gently mix and pour into prepared pan.

    Bake uncovered for 45 minutes. After 30 minutes of cooking, add enough parmesan cheese to just cover the top and sprinkle the french fried onions over that. Put back in the oven and continue baking the remaining 15 minutes!

    Chuck Wagon Skillet

    We love this spicy dish! To make it with less heat just uses a smaller amount of the jalapeno cheese!


    1 pound ground beef
    1/2 cup chopped onion
    2 TBS butter or margarine
    1 tsp salt
    1/8 tsp pepper
    2 cup cubed cheddar cheese (I use an 8-ounce bag of Colby and Monterey cubes)
    8 ounce block of Jalapeno cheese, cubed
    2-cup medium noodles, uncooked
    2 (14.5 ounce) cans diced tomatoes
    1/3 cup water


    In frying pan melt butter and sauté onion. Add meat; sprinkle with salt and pepper. Brown slowly.

    Pour off excess fat. Add cheese to cover meat. Add noodles to cover cheese

    Pour tomatoes and water over all. Cover, turn heat to low and simmer 30 minutes.

    DO NOT UNCOVER WHILE COOKING ( Stir occasionally but return the lid)

    Coca-Cola Pork Chops

    This is the 1st recipe that I've ever used Coca Cola in! Very tasty!


    6-8 pork chops
    12 oz. Coca Cola
    1 medium onion, diced
    3 Tbsp. prepared mustard
    6 Tbsp. ketchup
    dash of pepper
    1 can sliced mushrooms (or fresh)
    dash of garlic powder


    Brown pork chops on both sides. Remove.

    Dice onions and stir fry. Remove.

    Add all other ingredients then put pork chops and onions back into the skillet.

    Cover and simmer for 45 min. Take the lid off the last 5 or 10 minutes to thicken up the sauce.

    After heat is off, let rest for 15 minutes or so.

    Peach Crunch

    Very easy to make and very delicious!


    1 (29 oz.) can peaches, do not drain
    1 box butter pecan or spice cake mix
    1 stick butter
    1/2 C. chopped nuts


    Pour peaches and their juice into bottom of cake pan. Spread out. Sprinkle dry cake mix over peaches. Spread out evenly. Cut butter in to pieces and evenly space over top. Sprinkle on nuts.

    Bake at 350º for 40-45 mintues.

    Top with vanilla ice cream if desired.

    Two Minute Microwave Fudge

    This fudge takes more than 2 minutes to set up but the initial microwave time is 2 minutes! Very creamy and a new twist on making a quick fudge! Delicious!


    1/2 cup butter
    3 1/2 cups powdered sugar
    1/2 cup cocoa
    1/4 cup milk
    1 tsp. vanilla
    1/2 cup chopped nuts


    Place ingredients (except nuts) in bowl; do not mix. Microwave on high power for 2 minutes. Beat with electric mixer until smooth. Fold in nuts.

    Pour mixture into buttered 8x8 dish. Refrigerate 15-20 minutes until set.

    Makes 36 pieces.

    Chocolate Chip Cheese Ball

    My DH works with Westy, the owner of Westy's Pub and this was served at the yearly Christmas party! I knew I had to make this and it turned out perfect! Great dip!


    1 pack (8 oz.) cream cheese, softened
    1/2 cup butter, softened
    1/4 tsp. vanilla extract
    3/4 cup confectioners sugar
    2 Tbls. brown sugar
    3/4 cup miniature semisweet chocolate chips
    3/4 cup finely chopped pecans
    Graham crackers or shortbread cookies


    In a mixing bowl, beat cream cheese, butter and vanilla until fluffy.

    Gradually add sugars. beat until just combined. Stir in chocolate chips.

    Cover and refrigerate for 2 hours.

    Place cream cheese mixture on a large piece of plastic wrap. Shape into a ball. Refrigerate for at least 1 hour. Just before serving, roll cheese ball in pecans.

    Serve with graham crackers or shortbread cookies.
