    Berry Fresh Summer Salad

    Ok, so Wendy's Restaurants came out with a summer salad with fruit and chicken in the salad, served with raspberry vinaigrette and it was ok, not bad for a fast food salad, but I decided to make my own at home without the chicken and just fresh fruit! It was so good and refreshing! My family gave it 2 thumbs up!

    I made a strawberry lime vinaigrette to drizzle on the salad which took this salad to the top!

    1-1/2 cups iceberg lettuce
    1/2 cup fresh blueberries
    1 cup fresh strawberries, sliced into quarters
    2 tablespoons crumbled Feta cheese
    1/4 cup strawberry lime vinaigrette, recipe below
     
    Chop lettuce. Wash blueberries and strawberries and slice whole strawberries into quarters.

    In a salad bowl or plate layer lettuce, blueberries, strawberries, feta cheese and drizzle with vinaigrette.

    Makes 1 salad

    Strawberry Lime Vinaigrette

    WooHoo! I finally made a salad dressing/vinaigrette and boy was it easy! I put everything in the blender and wah-lah, I had homemade vinaigrette!

    My family said it tasted like a smoothie! Ok, that's a great compliment! We loved it and it tasted so fresh! The fresh strawberries and lime juice worked so well together! Yummy!

    2 cups strawberries, diced
    1 cup lime juice, about 3 limes
    3/4 cup extra virgin olive oil
    4 tablespoons honey
    1 tablespoon sugar
    salt & pepper to taste
    1/2 teaspoon poppy seeds
     
    Combine all of the ingredients except poppy seeds in blender and blend until smooth.

    Stir in poppy seeds.

    Makes 3 cups vinaigrette

    This is so funny you say that Janie! My 14 year old DD was gone to cheerleading practice when we ate and we were gone when she got home! When we got back I asked her if she wanted a salad and when I got the blender out of the fridge that held the vinaigrette she asked what it was! I told her I made homemade strawberry lime vinaigrette for the salad and she got the funniest look on her face and I asked her what was wrong and she said it looked like a smoothie and she drank some when she got home! Big Smile She liked it and we laughed like crazy! My DH kept looking at her and saying, "DUH"  That's going to be one moment we all never forget!
