These are my very favorite peanut butter cookie.
1/2c. butter, only butter
1c. peanut butter, I like chunky
1c. each brown and white sugar
1/2 tsp. vanilla
1 tsp. baking powder
1 1/2 tsp. baking soda
2 1/2c. flour
1/4 tsp. salt
1 c. chocolate chips
1/2 c. peanut butter chips, I do not use these
Microwave margarine and butter together until melted. In a mixer place the melted butter, sugars and peanut butter, mix on medium speed until well blended. Add eggs and beat for two minutes. Reduce speed to low and add baking powder, soda, salt and vanilla. Add 2 cups of the flour 1 cup at a time allowing for blending into mixture. Remove from mixer and mix by hand the remaining flour. Add the chips and mix well. Scoop 1 " balls of the cookie mixture onto a greased cookie sheet and bake at 350 for 10 minutes or until lightly browned.
Make sure to time these and do not over bake, They are also good with those tiny M and M pieces in them.
Thank you Karen- I will have to try these sometime, but I don't have margarine here only butter. I will have to wait until I can get margarine.
