INGREDIENTS:1 package (8 ounces) cream cheese, softened1 can (6 ounces) chunk-style salmon; drained2 tablespoons mayonnaise1 lemon1/4 cup shredded carrot1 tablespoon chopped onion1 tablespoon fresh snipped dill weed2 medium cucumbers, sliced DIRECTIONS:Combine cream cheese, salmon, and mayonnaise and mixwell. Juice lemon to measure 2 teaspoons lemon juice.Zest lemon to measure 1 teaspoon lemon zest. Addlemon juice, lemon zest, shredded carrot, onion, anddill to mixture; mix well. Slice cucumbers into 1/4-inch thick slices. Top each cucumber with 1 tablespoonof salmon mixture. Top if you like with a small sprigof fresh dill for garnish. Tip: This is best presented using a pastry bag and a star tip to pipe salmon mixture onto cucumberslices.
