Battered Flounder Bites with Jalapeno Tarter Sauce
1 cup mayonnaise
2 Tbs chopped shallots
1 Tbs chopped jalapeno pepper
2 tsp hot sauce
1 tsp lemon juice
1/4 tsp salt
1/4 tsp ground red pepper
1 8-oz. pkg. hushpuppy mix
3/4 cup milk
1 1/4 lb flounder fillets, cut into 1-inch pieces
2 cups vegetable oil
1 cup flour
Directions
Stir together mayonnaise, shallots, jalapeo pepper, hot sauce, lemon juice, salt and red pepper in medium bowl. Cover and chill until ready to serve.
Stir together hushpuppy mix and milk in medium mixing bowl.
Pour oil into large deep skillet to depth of 1/2 inch. Heat oil to 350F. Dredge fish in flour, then in hushpuppy mix.
Place fish in oil and fry in batches 3 to 4 minutes on each side or until golden. Serve with sauce.

I have never used a hushpuppy mix like this before. But I have used corn meal when breading fish, It should be very tasty. And the Tarter sauce is kicked up. Good idea.
