Zucchini Bread Muffins & Pureeing Veggies for Quick Breads.
Zucchini Bread Muffins2 - large eggs1/2 - cup vegetable or canola oil1/2 - cup applesauce(I used my homemade spiced applesauce)1 - teaspoon vanilla extract1 - cup light brown sugar2 - cups shredded or pureed zucchini squash2 - cups all purpose flour1 - tsp salt1 - tsp soda1/2 teaspoon baking powder3 - teaspoons cinnamon1/4 teaspoon nutmeg1/2 cup chopped nuts, optionalPreheat your oven to 350°F. Grease a muffin tin with non stick baking spray or use muffin liners. In a large bowl using an electric mixer on medium speed beat together the eggs, oil, vanilla, applesauce and pureed or shredded zucchini. Add all the dry ingredients and mix until everything is combined. Add nuts and pour the batter into muffin tins, filling each tin about 3/4 full. Bake at 350 degrees for 15-18 minutes or until golden brown and a toothpick inserted into center of muffin comes out clean. Let cool slightly before removing from muffin tin. Makes a dozen muffins. Recipe yields about 12-14 muffins

Erica: Have you ever used a crock pot for those sweet breads? I've made so many zucchini breads and banana breads in there- no oven, no heat and less money cost! I usually put a tube pan inside of my crock pot instead of the heavy ceramic insert (some recipes say you can use the ceramic insert just fine, if you don't have a removable one). I grease it like normal, then add any batter- don't really have to make changes to recipes. Just cook it on Hi for 2 hours, and it should be great. The only difference is that it is a round shape, but that doesn't matter in the taste of it! I make most of my cakes and cornbread that way now. Hope this helps.

That is a great idea about using the crock pot to bake with. I have made a cake/cobbler like dessert and have lost the receipe but had not tried to bake other things in it, will give it a try in a couple of days. Thanks for the suggestions.
