O'Charley's Caramel Pie

  • O'Charley's Caramel Pie
    I have seen a caramel pie recipe that is supposed to be like O'Charley's that is made with Eagle Brand milk boiled in water for several hours. Has anyone made this pie or a similar one? Thanks for any input.

    3/4 Cup Butter
    1-1/2 Cups Chopped Nuts
    1 7-oz. Package Coconut
    1 8-oz. Package Cream Cheese
    1 Can Eagle Brand Sweetened
    Condensed Milk
    1 16-oz. Cool Whip
    1 Jar Caramel Ice Cream Topping
    2 Deep Dish Pie Shells

    Melt butter, add pecans and coconut; cook until light brown. Cool completely. In a bowl, beat cream cheese and milk until creamy. Gradually fold in cool whip. Layer 1/4 each cream cheese mixture, coconut mixture, and caramel. Repeat layers.

    CARAMEL PIE

    3 T. butter or margarine
    4 T. all-purpose flour
    1 C. dark brown sugar
    1 egg
    1 C. milk
    1 (8-inch) baked pie shell
    1/2 pt. whipping cream

    Cream butter or margarine, flour and brown sugar. \

    Beat egg with milk and add to creamed mixture. Cook in double boiler until thick. Cool.

    Fill baked pie shell with mixture. Top with whipped cream.

    Here it is and its almost identical! Hope you enjoy it!!

    I got it from a local restraunt family in Mississippi. I have made it several times before and is probably one of the most memorable desserts I have made. Very rich.O'Charleys doesnt use bananas, so you can omit them.


    Caramel Banana Pie


    4 cans sweetened condensed milk,boiled 3 1/2 hours unopened(keep covered with water to keep it from exploding)
    6 skor bars-frozen then smashed with a cleaver in to chunks
    1 large tub cool whip
    2 graham cracker shells
    4 bananas, sliced


    Boil the milk 1 day ahead of time. Place sliced bananas in the bottom of crusts. Pour a littel caramel then top with some of the candy(reserving some for garnish).Top with remaining caramel and cool whip. Sprinkle with candy. Refrigerate until serving time.

    *I also at times garnish with a little shaved chocolate. This is super rich and is a cream style piee so slices arent percet. But its amazing- anyone who has tried it loves it!

    Boy, you guys are great. I posted my question then left. I wasn't expecting answers so quickly. I'm very new here, but love how everone seems to help with any problem.

    I just read (somewhere) the other day about making caramel by taking the condensed milk and caramel-izing it by cooking it in the crockpot (or using a double boiler. I guess it would be the same stuff as the cooked-in-the-can stuff??? Has anybody tried it?

    I read someplace (probably here) that some people boil 2 or 3 cans at a time and keep it handy. I'm thinking they called it LIQUID GOLD!

    You have to be VERY VERY careful if you do "boil" the Eagle Brand in the unopened can. Be SURE to keep it under water at all times. Do NOT remove it from the water until can and all have completely cooled off. If you do it can possibly explode into your face. I have done this also, and it is delicious, but it is risky. It may have to be under that water for several hours while cooling too. Good luck :)
