    Here is a good chicken recipe. I made it years ago, lost the recipe and just found it tonight. Enjoy! It is from Good Housekeeping about 15 years ago.
    Louisiana Chicken
    1/4 c. oil
    2 x 2lb fryers, cut up
    1/2 c. flour
    4 celery stalks, sliced thin
    3 green peppers, cut into strips
    2 medium onions, diced
    2 chicken bouillon cubes
    3 c. water
    2 t. salt
    1/2 t. Tabasco sauce

    In a large skillet, brown chicken in oil. Remove to a 5 qt casserole. Into drippings, stir flour. Cook and stir until dark brown (best to use a heavy pan). Add the vegetables and cook until tender. Add remaining ingredients and bring to a boil. Preheat oven to 350º. Pour sauce over chicken. Bake for 45 minutes.

    Thanks Tamara for the recipe. It sounds very goos. It looks like you don't cover the casserole,while the chicken is in the oven?

    Any food from La. is great in my book.  Could call this    baked chicken gumbo. Thanks for the bump.
