  • Chinese Crispy Noodle Chicken Casserole
    CHINESE CRISPY NOODLE CHICKEN CASSEROLE

    1 can condensed crea:n of celery or chicken soup
    l/4 cup evaporated milk
    1 6-oz. can boned chicken
    1/2 cup blanched almonds, sliced
    l/2 cup minced celery, or 1 can bean sprouts if preferred
    1 small onion, minced
    1/4 tsp. soy sauce
    1 can crisp Chinese nocdles

    Blend condensed soup and condensed milk; combine with chicken, almonds, celery, onion, and soy sauce. Sprinkle half the noodles in bottom of 1 1/2 qt. greased baking dish. Spoon chicken mixture over noodles; top remoining noodles. Bake in moderate oven at 350 degrees for 30 to 35 minutes or until bubbling hot. Serves 4,

    I made this for dinner tonight and it certainly was delicious! I used some chicken that I already cooked, and I ran out of soy sauce, so could not add that. Soy sauce would have made this even better.
