    Probably the easiest thing for a crowd is Baked Ziti. Use throw away lasagna pans and boil the ziti up and cool it down. Get a big bowl and put what will fit in the lasagna pan in the bowl. Ad whatever you like to it, ground beef, sausage, pepperoni, riccotta, mozzarella and tomatoe sauce. Mix all together and put it in the pans. Cover with foil and bake at 350 for an hour. Serve with garlic bread and a salad. Perfect!

    I don't know how many you are cooking for, but this has been made at a church camp for lots of people.  I have made it for a group of 50 at a bunco retreat using boneless chicken thighs.  It really is good!

    I used to cook up at a Girl Scout camp for a 1,000 leader training weekend. We cooked them fancy stuff. We'd cook and do dishes from 4am until midnight from Friday morning until Sunday night. We volunteered... no one could ever pay me enough to do all that work!!! This is not your regular camp fare. Here's one of our recipes. It is wonderful.

    Inside out stuffed chicken

    1-8oz pkg stuffing mix
    1/4 cup margarine, melted
    1-10 3/4 oz can condensed cream of chicken soup
    1/3 cup milk
    2 1/2 to 3 pound chicken
    In large bowl, combine stuffing mix and melted margarine; toss well. In medium bowl, combine the soup and milk. Dip chicken into soup mix, then into stuffing, pressing with hands to coat. Place on ungreased baking pan. Bake at 375 degrees for 1 hour. 4 servings

    NOTE:
    I'm using boneless chicken breasts tonight. All cuts of chicken work good. Just adjust your baking time according to the chicken you use. This is truly delicious! The butter and the stuffing and the drippings all baked in the pan until crispy and gooey. Ahhhhhh.... comfort food! I'm going to have some green beans (with bacon grease!) and some extra stuffing cooked in the pan with it! Please give this a try!

    I know this is an older posting, but I must respond! We have meals at church on Wednesdays to accomodate our families, and enable them to participate in the ministries. On Wed. we have Kid's Club,men's and women's Bible studies choir practice, Kid;s musical programs, etc. It becomes a time of fellowship and a "church family" meal. Everyone is invited, and we ask for signup on the back of our roll call cards on Sun. so we know how many to prepare for. We also reach out to the senior apartments across the street offer the meals to them also - they can call the office by Tues. if they are coming. Many churches are using outreach ideas such as this to make it easier for the whole family to participate in the ministries offfered by the church, and they invite unchurched friends to join us also!

    BBQ Pork and Sauerkraut

    4 or 5 pounds of boneless pork

    32 oz. jar of sauerkraut (rinsed and drained)

    1-16 oz. bottle of BBQ sauce

    2 cloves of garlic

    dash of salt and pepper

    1/4 t spoon to crushed red pepper

    Season and brown your pork and make sure to drain the sauerkraut. Place everything in a slow cooker until the pork is tender. Serve with rolls or on a bun. My teenage boys love this!  Good luck and God Bless

    The most popular food I ever took to a potluck was barbequed chicken wings with a mild sweet sauce. I just baked them in the oven at 350 for an hour and they were a hit.

    WHERE  are the the so important green vegetables or even just a plain lettuce salad with a very mild oil-vinegar dressing or ranch dressing?

    Don't people eat vegetables any more?

    Last week I have seen lettuce on sale for 99 cents p head for ice berg.

    I wish our church would get together for meals more often. I think it is such an important part of building relationships. My mother often took a 7 layer salad to potlucks...so easy and yummy.

    Last week I have seen lettuce on sale for 99 cents p head for ice berg.

    We eat salads and vegetables at our house.  Yesterday I made an Asian chopped salad using bok coy, celery, carrots, radishes and other chopped herbs, added sliced almonds and mandarin oranges and dressed it with a sesame/ginger dressing...Yummy.

    We generally have a salad or some type of fresh vegetable with every meal!

    I do a lot of pasta salads.  Please remember that so many of us older people have food allergies or sensitivities, and use the canned Healthy Request soups instead of the regular ones to avoid the MSG in the casseroles.  You have a lot of great ideas here!  I do smoker BBQ pork shoulder, and it goes a long ways and is economical.  Some cole slaw and buns, and you are all set!

    Soups and stews

    BBQ sandwiches

    Salads

    Baked ziti or any casseroles with hamburger, chicken, ground turkey and fillers of rice, pasta, noodles, potatoes, etc.

    Folks enjoyed this dish I brought...roasted vegetables (ratatouille) made up of what you can find...peppers, onions, mushrooms, zucchini, summer squash, eggplant, carrots,butternut, green beans, garlic, sprinkled liberally with kosher salt and Mrs. Dash (or what have you) mixed with Kitchen ready crushed tomatoes and olive oil.  Roast at 400 degrees, stirring occasionally until vegetables have "melted" down and are fragrant and slightly browned.  (Use as many roasting pans as needed to have vegetables roast in a single layer.)  Spoon into a crockpot and reheat.  I served this with another crockpot of multi-grain pilaf or you could use basmati rice.  People were glad to eat "healthy".  You could mix in some kidney or some other bean for a protein boost.

    I do a number of functions at church that mainly involve lunch. A couple of years ago TOH had a recipe for Holiday Brunch Casserole. You make it the night or afternoon ahead. Clean kitchen then the nest day. Hash br. Pot., bulk sausage, supper easy and everyone loved it. I made it in the chaffing dish pans, that is a double batch or 2. 9x13 pans. I had all kinds of raw vegetables as the side. Used the Duncan hone doctored cake mix done in bunt pans for desert. Great food, time for the cook to visit and easy clean up. Janet
