    I am looking for a stuffed tomato recipe. The tomato pulp is emptied out and stuffed with a mixture of ground beef and corn. What other ingredients may be included I'm not sure. But the tomatoes are then baked in a shallow baking pan until done. Do you have anything similar to this?

    I don't need a recipe but I am trying to locate an article on the daughter of friends of mine. I think it was in Light & Tasty, probably within the last 18 months or so.
    It was in the first part of the mag where readers tell why they like the magazine and what help it is. Her name is Christy Zimmerman, DVM, and her husband is Steve (?) Senn. They are from NJ. Her parents have never seen the article and I'm not sure that Christy & her hubby did or not.

    What a considerate offer!

    I made a cajun shrimp with mango salsa for my husband a few months ago from a taste of home mag, maybe light and tasty? He has been begging for it lately, and I cannot find it! I have searched through my stacks of old TOH, but to no avail. If you could help me I would be so grateful!

    Brooklynmom, Thank you so much for this great offer. I loaned out a copy of TOH and instead of copying the recipes she wanted she took the entire page. So, I'm looking for a recipe from the April/May 2000 TOH. It was in the middle section called Chicken Chili Lasagna. Again thank you for this recipe and if I can help you with a recipe someday let me know.

    Hi brooklyn mom.
    Thanks for your offer. I am missing a recipe called "finger steaks". It was for shishkabobs and i think it was from quick cooking last year sometime probably in the summer.
    I keep all my issues of quick cooking so i know it was a "clip out" recipe as i cut and file those. But i cant seem to find it.
    If you could help i would greatly appreciate it thanks, canadianswaan

    I made a mistake on the title of the recipe I'm looking for. Its called Parmesan Chicken, not Chicken Parmesan. sorry. It's in the June/July issue 2003 on pg. 28.

    I was at the chiropractor yesterday and I picked up a Quick Cooking magagzine. I think it was the latest. I know Sept. was on the cover. I copied the recipe quickly,for Spinach Lasagne roll-ups but I didn't know how many lasagne noodles to cook. I don't know if the recipe said how many to cook. I already have the ingredients mixed. I'm glad I saw your post.

    I am looking for a recipe that was in Light N Tasty, June/July 2001 issue. It was on page 44 and called Turkey Lo Mein. Lost my issue and could only find issue and page number on TOH website. Would really appreciate the recipe.

    I have lost my issue of Taste of Home that contained a recipe called "Company Casserole"... It is a beef casserole, with mashed potatoes, gravy and peas. Unfortunately, I don't know what issue it is in. I must have lent it out to a friend...but I can't remember who it was! If you can help me, I would very much appreciate it.

    Hey, WAmom! I live in Wa,too. Tacoma, where are you? I thought that I'd help brooklyn mom with this one. I bought a few old copies at a yard sale, and this was one of them.

    Chicken Chili Lasagna
    2 packages (3 ounces each) cream cheese, softened
    1 medium onion, chopped
    8 green onions, chopped
    2 cups (8 ounces) shredded Mexican-cheese blend, divided
    2 garlic cloves, minced
    3/4 teaspoon ground cumin, divided
    1/2 teaspoon minced cilantro or parsley
    3 cups cubed cooked chicken
    1/4 cup all-purpose flour
    1-1/2 cups chicken broth
    1 cup (4 ounces) shredded Monterey Jack cheese
    1cup (8 ounces) sour cream
    1 can (4 ounces) chopped green chilies, drained
    1/8 teaspoon dried thyme
    1/8 teaspoon salt
    1/8 pepper
    12 flour tortillas (6 inches), halved
    In mixing bowl, combine cream cheese, onions, 1-1/2 cups Mexican-cheese blend, garlic, l/4 teaspoon cumin and cilantro. Stir in chicken; set aside. In a saucepan, melt butter. Stir in flour until smooth; gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in Monterey Jack cheese, sour cream, chilies, thyme, salt, pepper and remaining cumin. Spread 1/2 cup of the cheese sauce in a greased 13-in X 9-in X 2-in baking dish. Top with six tortilla halves, a third of the chicken mixture and a fourth of the cheese sauce. Repeat tortilla, chicken and cheese sauce layers twice. Top with remaining tortillas, cheese sauce and Mexican cheese. Cover and bake at 350 degrees for 30 minutes. Uncover; bake 10 minutes or until heated through. Let stand 5 minutes befor cutting. Yield: 12 servings.
