This is a baked oatmeal version I created one night that is a lot different than traditional baked oatmeal. I added in some flour and baking soda which give it a cakey consistency. A touch of honey and ground cinnamon create a comfort-food, down-home feel while flavors of peanut butter and brown sugar round it all out. I hope you like my recipe!
3 cups quick oats
1 cup all-purpose flour
1/3 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon ground cinnamon
3 tablespoons honey
1/3 cup butter
1/4 cup smooth peanut butter
2 eggs
1 1/3 cups milk
1/2 cup mini semisweet chocolate chips (opt.)
1) In a bowl whisk together the oats, flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
2) In a microwave-safe bowl combine honey, butter, and peanut butter. Microwave on high power 1-2 minutes, stirring ever 30 seconds until mixture is smooth and melted.
3) Whisk in melted butter mixture, eggs, and milk into dry ingredient s until blended.Stir in chocolate chips (opt.)
4) Pour into a greased 13 by 9 inch baking pan. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted in the center comes out clean and top is golden brown. Sprinkle with additional cinnamon sugar if desired before serving.
