**Looking for a side dish recipe to go with Meatloaf**

    Hi all!! I am new to this board! My husband & I are just newly married & I am getting better at this whole cooking/trying new recipes thing! :) We have a dinner to go to on Sunday and I need to bring a side dish of some sort. The menu is: Salad/rolls
    meatloaf
    greenbean casserole
    cheesy potatoes
    *AND* my side dish!
    pies for dessert

    **I'm looking for something to compliment that menu and is not too challenging to make either!

    Suggestions please!

    I would add something with fruit such as a fruit salad. Or better yet--with apples in season, how about homemade applesauce? I have an easy crockpot recipe which I've posted a couple times. Have fun!

    I would think that something colorful, like a carrot dish, or something green like a broccoli salad would be good with the menu. Even something simple like a jello salad would be tasty.

    This was a recipe I made early on in my marriage. I still make it and it's never failed me. It's easy and most people like corn.

    Corn with Chive Sauce

    32 oz bag frozen corn
    3 oz pkg Philadelphia Cream Cheese with Chives, softened
    1 small (2 or 3 oz I think) jar pimientos, drained
    1/4 tsp salt
    1/4 tsp white ground pepper

    Cook corn according to pkg directions, drain all water. Immediatly stir in cream cheese and stir until melted. Mix in pimientos, salt and pepper.
    6-8 servings.

    Tips: Don't substitute canned corn, it's not nearly as good.
    This recipe can be easily doubled or halved.
    Sometimes I use reg cream cheese and stir in fresh chopped chives
    I've also made it without chives and it's still very yummy!

    It seems like yesterday I was in your shoes. I didn't really know how to cook different things. My husband got really tired of Hamburger Helper. Now eleven years later my cooking skills have improved. I love to cook and try new things.
    One thing that is always safe in deviled eggs. One of our favorites is sweet potato casserole. This recipe is always gone in seconds.

    3 cups mashed sweet potato
    3/4 cup sugar
    2 eggs beaten
    1/2 cup butter melted
    1 tsp. vanilla

    topping:
    1 cup brown suger
    1 cup chopped pecans
    1/2 cup flour
    1/2 cup butter melted

    Mix the potatoes, suger, eggs, butter and vanilla. Place in a greased casserole dish. Mix the topping ingredients well. Spread over the top of potatoes. Bake at 350* for 45 min. to 1 hour.

    THANK YOU ALL FOR THE SUGGESTIONS!!! :O)

    I ended up baking butternut squash with butter & brown sugar for the dinner today, which was a HUGE hit **AND** I attempted to make a "home-made" pumpkin pie which was PERFECT!! (Well almost perfect...I foiled my edges so that they wouldn't get too burnt & when I took the foil off (the pie was still cooking)some of the edges of my crust came off! :(

    No biggie though - the pie still turned out FABULOUS!! Really...everyone said they liked it & were surprised that I made it! :) WOOHOOOO!! It felt good to bring 2 dishes to the dinner & have them be such a "hit"!!!!! :O)
