This is an adapatation of a recipe, I changed it up a bit to make it even more easier. This cake is light and fluffy, quick and easy, and best of all, really yummy! Add chopped nuts in place of the chocolate chips if you like. Great for a snack or even dessert if you wish.
1 cup all-purpose flour
2 teaspoons baking powder
1/4 tsp. salt
1/4 cup packed light brown sugar
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 cup water
1 cup applesauce
1/4 cup butter, melted
1 1/2 tsp. vanilla
1/3 cup semisweet chocolate chips
TOPPING: 2 Tbsp. sugar, 1/2 tsp. cinnamon, 2 Tbsp. mini semisweet chocolate chips
1) In a bowl whisk together the flour, baking powder, and salt. Stir in all remainining ingredients with a whisk until smooth.
2) Pour into a greased 8-inch round baking pan. Combine topping ingredients sprinkle over cake, bake at 375 degrees for 25 minutes.
Note: this can also be made in a 9 by 5 by 3 inch loaf pan, or an 8 inch square baking pan.
