classic italian is olive oil,red winevinegar ,italian seasoning, S&p. adjust to taste.
i always add garlic cloves to my red wine vinegar jar when i open it.
I also use good quality white wine vinegar to make some flavored vinegars for salad. I love adding dill ,,then i mix it w/ a little oil ,S&P ..i also usually add a pinch of cayenne to make flavors "POP" but using the basics you can ad sun dried tomatoes and spices or even pureed roasted peppers with some oil & vinegar for a nice alternative.

This is one of my favorites:

    Poppy Seed Dressing

    1/3 cup of sugar
    2 Tablespoons vinegar
    1 Tablespoon lemon juice
    ½ teaspoon salt
    ½ teaspoon dry mustard
    ½ cup vegetable oil
    2 teaspoons poppy seeds

Mix sugar, vinegar, lemon juice, salt and mustard in a mixer bowl or food processor. Gradually add oil, beating until thick and smooth. Stir in poppy seeds. Cover and refrigerate at least 2 hours. Makes ¾ cup. This is great served over a mixture of lettuce, spinach, boiled eggs and bacon. Garnish with croutons.

I like to make a chopped salad (no lettuce) when I want to serve a buffet.  It's easier to eat when you are "balancing" a plate.  Medium dice...onion, cucumber, radish, bell peppers, celery, halved grape tomatoes, etc.  Sprinkle with Penzey's Fox Point seasoning and red wine vinegar.  Oil not needed!  That said, I made a chopped salad for two last night the same way!!
