Sounds like you're well on your way already. We used to make cider every year using a cider press. You put the apples in the top section that chops them up as you turn the crank...they fall into the cheese cloth "bucket" - once it's full, close it up, putting the wooden top (that comes with the press) on top of the cloth. Begin to turn the crank wheel, which begins applying pressure to the apples mixture squeezing the juice out until there's nothing left but pulp...the juice drains into a clean bucket or container that you have set up. Drink away!!! We have always had our cider fresh...we never pasturized....it can also be frozen in jugs...just be sure to leave space for when it expands during the freezing process.
