    Ten Minute Dinner

    1 pound ground beef
    1 large onion, chopped
    1 can (10 3/4 ounces) cream of mushroom soup, undiluted
    1 can (10 3/4 ounces) cream of chicken soup, undiluted
    1 can (15 ounces) mixed vegetables), drained
    1 can (5 ounces) chow mein noodles

    Brown beef and onion; add both soups, mixed vegetables and 3/4 can of chow mein noodles. Pour into cassrole dish.
    Top with remaining chow mein noodles.
    Bake at 400 degrees F. for 10 min or until hot.

    Note: Any flavored soup and any flavored cream soup can be substituted if so desired. I like to bake this casserole for one hour to give the soup flavors to bake into the meat.

    San Jose, California Incredible Chicken Salad

    3 cups chicken breast (cooked and cubed)
    1 cup pineapple (diced)
    1/2 cup celery (diced)
    1/2 cup mayonnaise
    1/4 cup raisins
    1/4 cup walnuts
    1/8 cup dried cranberries
    2 Tablespoons sweet onion (minced)
    2 Tablespoons apple juice

    Combine all ingredients in a bowl until well combined and chill. Serve with a lettuce garnish.

    Note: Original recipe credit goes to Marc Rose. This recipe came frome San Jose, California.

    San Jose, California Sparkling Cranberry Punch

    2 (28 ounces each) ginger ale (chilled)
    2 cans (16 ounces each) jellied cranberry sauce
    1 1/2 cups orange juice

    Beat the cranberry sauce until the cranberry sauce is smooth and then stir in the orange juice. Chill the mixture until it is needed. Pour the mixture into the punch bowl. Add the
    chilled ginger ale slowly into the mixture and blend until the punch is well blended together. Serve and enjoy!

    San Jose California Mixed Up Potato Salad

    4 waxy potatoes, boiled and cubed
    2 beets, scrubbed, boiled and cubed
    2 stalks celery, finley chopped
    1/2 onion, finely chopped
    1/2 pound string beans, cut into 1/4 inch pieces
    1 cup cooked peas
    1 cup mayonnaise
    2 Tablespoons mustard

    Combine all vegetables together in large bowl. Add mustard and mayonnaise to moisten. This salad can be made ahead of time with any leftover vegetables if so desired.

    Note: This recipe came from San Jose, California.

    The 1/2 pound string beans that has been cut into 1/4 inch pieces needs to be cooked before adding them into the Mixed-Up Potato Salad.

    To red123_ks: I hope you enjoy the chicken salad recipe! I have other people also tell me that my PRCA BB name handle reminds them of the Professional Rodeo Cowboy Association, but I can rest assure you and everybody else that I am not a rodeo person. :-)

    San Francisco, California's Joe's Special

    1 pound ground beef
    1 frozen package (10 ounces) spinach, drained and cooked
    2 cups mushrooms, cooked
    1/4 cup grated parmesan cheese
    *1 teaspoon basil, dried* (optional)
    4 eggs, beaten
    1 onion, chopped
    salt to taste
    pepper to taste

    Brown the ground beef and the chopped onions in the skillet and then season with salt and pepper. Drain off the hamburger grease. Add in the spinach and the mushrooms and mix together well. Pour in the beaten eggs and sprinkle with the *basil*. Stir the mixture while it is cooking. Remove the mixture from the heat when the eggs are set. Sprinkle the mixture with the parmesan cheese. Serve while the mixture is hot. Makes 4 servings.

    HISTORY NOTE: This California dish (Joe's Special) originated in San Fransico, California at the "Original Joe's Restaurant" in the 1970's.

    HillBilly Cake

    1 can (20 ounces) undrained crushed pineappple (The pineapple can be sweetened or unsweetened.)
    2 cups flour
    1 1/2 cups white sugar
    1/2 cup melted butter
    2 teaspoons baking soda
    1/2 teaspoon salt
    2 eggs
    1 cup light brown sugar (For cake topping)
    1 cup chopped walnuts (For cake topping)

    Mix together the white sugar, eggs, melted butter, flour, baking soda, salt, crushed pineapple including the pineapple juice in a mixing bowl. Pour the cake batter into a greased and floured "9 x 13" cake baking pan. Top the cake batter with the 1 cup light brown sugar and with the 1 cup chopped walnuts. Bake at 350 degrees Fahrenheit (F.) for 40 minutes.

    ***This is an excellent pineapple cake!!!***
