    cheeseburger soup

    Hi eveyone, Im loking for a recipe for cheeseburger soup. I think it was in a Taste of Home mag a few years back. Its an easy soup made with hamburger and canned cheese(maybe nacho cheese) and/or potato soup.
    I need this for my step dad ya see my mom died a few years back and she used to make this. My step dad can not cook and needs an exact recipe.:-) Does anyone have this recipe or know where I can find it?

    This is it and it's great!

    Cheeseburger Soup

    1/2 pound ground beef
    3/4 cup chopped onion
    3/4 cup shredded carrots
    3/4 cup diced celery
    1 teaspoon dried basil
    1 teaspoon dried parsley flakes
    4 Tablespoons butter or margarine, divided
    3 cups chicken broth
    4 cups diced peeled potatoes(1-3/4 pounds)
    1/4 cup all-purpose flour
    8 ounces process American cheese, cubed(2 cups)
    1-1/2 cups milk
    3/4 teaspoon salt
    1/4 to 1/2 teaspoon pepper
    1/4 cup sour cream

    In a 3-qt saucepan, brown beef; drain and set aside. In the same sauce
    pan, saute onion, carrots, celery, basil and parsley in 1 Tablespoon
    butter until vegetables are tender, about 10 minutes. Add broth,
    potatoes and beef; bring to a boil. Reduce heat; cover and simmer
    10-12 minutes or until potatoes are tender. Meanwhile, in small
    skillet, melt remaining butter. Add flour; cook and stir 3-5 minutes
    or until bubbly. Add to soup; Bring to a boil. Cook and stir 2 minutes.
    Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir
    until cheese melts. Remove from heat; blend in sour cream.
    Yield 8 servings(2-1/4 quarts)

    Spicy Cheeseburger Soup
    1 1/2 c water
    2 c cubed peeled potatoes
    2 small carrots, grated
    1 small onion, chopped
    1/4 c chopped green pepper
    1 jalapeno pepper, seeded & chopped
    1 garlic clove, minced
    1 Tbsp beef bouillon granules
    1/2 tsp salt
    1 lb ground beef, cooked & drained
    2 1/2 c milk, divided
    3 Tbsp flour
    8 oz process American cheese, cubed
    1/4 to 1 tsp cayenne pepper, optional
    1/2 lb sliced bacon, cooked & crumbled
    In a large saucepan, combine the 1st nine ingredients; bring to boil. Reduce heat; cover & simmer for 15-20 min or til potatoes are tender. Stir in beef & 2 c milk; heat through. Combine flour & remaining milk til smooth; gradually stir into soup. Bring to boil; cook & stir for 2 min or til thickened & bubbly. Reduce heat; stir in cheese til melted. Add cayenne if desired. Top w/bacon just before serving.

    I made it recently - the one lindachicken posted and it's good.

    I saved a little chopping/shredding time by using frozen hashbrowns (the kind that are cubes not shreds) and just putting small carrots under my hand chopper and giving them a few whacks.

    mine is like the last one. Except I like to put all mine in the slowcooker and let it cook. Then put cheese in about hour before serving. And I just use shredded cheddar. Someone I know puts bread crumbs on top of theres. Plus I use ground turkey in place of hamburger.
