    Someone asked for my Sweet Potato Casserole yesterday....here it is!

    I don't know why mine is any more special than anyone else's (I haven't read the other recipes) but I know my sister asks for this all the time!

    SWEET POTATO CASSEROLE
    FILLING:
    2 lbs. sweet potatoes, about 4, peeled and cut into 1" cubes
    1/2 cup packed light brown sugar
    1/2 cup butter
    2 eggs, lightly beaten
    1/3 cup milk
    1 tsp. vanilla extract

    TOPPING:
    4 oz. chopped pecans, about 1 cup
    2/3 cup packed light brown sugar
    1/2 cup all-purpose flour
    1/3 cup butter, melted

    For filling, in large pot, combine potatoes with enough cold water to cover; over high heat bring to a boil. Reduce heat to medium; simmer until potatoes are tender, 30 minutes. Drain; mash until smooth. Let stand until cooled slightly, 15 minutes. Preheat over to 350 degrees. Butter 2-qt. baking dish. In bowl combine potatoes with next five ingredients. Spread mixture in baking dish. For topping, in large bowl, combine pecans, sugar and flour; stir in butter until mixture is combined. Sprinkle pecan mixture over potato mixture. Bake until top is browned and mixture is set in center 40 - 45 minutes. Makes 12 servings.

    Kim, have you ever made this is a crockpot? I use a lot of crockpots for the holidays because my oven is busy with turkey, ham, pies, etc..

    btw - it sounds wonderful

    I made this for my DIL birthday, and I made it in the crockpot. I cooked the potatoes first and whipped them up then continued with the recipe. Everyone loved it, In fact I plan to do it for Thanksgiving the same way. I will probable cook the potatoes on Sunday or Monday to cut my workload down.

    I have one of those 2 sided crockpots, I put Sweet Potatoes on one side and Company Potatoes on the other, worked out really great. I may not be able to do that for Thanksgiving, because I will have to prepare larger quantities, since there will be about double of us here.

    Yum. This sounds really good. I think I will give it a try this Thanksgiving. I love the crockpot idea! I always use one for the mashed potatoes. It's so much easier than all that last minute mashing, etc.

    Hi Kim: Great recipe and I intend to follow it for a Sunday dish.. Only one question - "sweet potatoes" or "yams"????

    I had a recipe once almost like this that came off the back of a can of yams, but I can't seem to find that brand anymore. Thanks for sharing, Kim. That recipe also used mini marshmallows and coconut, but I skipped the coconut. The topping is absolutely delicious.......

    My sister can tell the difference between yams and sweet potatoes, but I've never been able to understand it. I'm sure lots of people on here know.....hope they share.......

    Here in Georgia, a similar recipe has been served for years at Holiday dinners and buffets. Someone always has to sign up for the Sweet Potato Dish. It is very popular and sweet enough to be a dessert.

    Senator Russell's Sweet Potatoes

    3 cups sweet potatoes, cooked and mashed
    1 cup sugar (I use half white gran. and half brown)
    2 eggs, lightly beaten
    1 tsp. vanilla
    1/2 cup milk
    1/2 cup butter
    Combine ingredients, place in greased 9x13 (or equivalent)casserole dish and top w/ the following mixture.

    Topping: This is great and really needs to be browned in the oven!

    1 cup brown sugar (packed)
    1/3 cup plain flour
    1 cup chopped pecans
    1/3 cup butter

    Mix topping ingredients together until crumbly. (I use a pastry cutter sometimes) Sprinkle over casserole. Bake at 375 degrees for 30 to 40 minutes.
