    HOW TO ADJUST COOKING TIMES FOR DIFFERENT-SIZE PAN

    Can anyone tell me a "formula" for adjusting the cooking time, when using a different sized pan from what the recipe calls for? For example, there are a number of different jelly roll pan sizes, and if I have a different size than the recipe is calling for, how can I calculate the different baking time for my size of pan? Thanks!

    For jelly roll, it would be a very bad idea to use a different sized pan unless you also adjust the size of the recipe. Jelly roll recipes usually make exactly the amount of batter needed for the size pan they call for and you can't stuff that amount of batter into a smaller pan, nor can you spread it out in a larger one and expect to get a cake that you'll be able to use in the finished product.

    However, since jelly rolls only take 12-14 minutes to bake at the best of times, if you have the proper amount of batter for the size pan you're using, you're not going to have to adjust the time very much. Just watch toward the end (through the window, if possible, you don't want to keep opening the oven when baking a cake), and as soon as the cake pulls away from the edges, remove it.

    Thank you for your answer, LMNOP! It wasn't exactly what I wanted to hear :-) but it makes perfect sense when I think about it. Bummer. Every recipe I see that calls for a jelly roll pan seems to call for a different sized jelly roll pan. Most unhandy! Thanks again, very much!

    What you want to be careful of is the volume of a particular pan and to pick a pan size that is of equal volume. To check the volume of any pan, fill it with water (or rice if it's a springform pan and won't hold water) and measure the amount.

    To substitute a pan that is shallower than the pan in the recipe, reduce the baking time by one-fourth and begin checking for doneness at that time.

    To substitute a pan that is deeper than the pan in the recipe, increase the baking time by one-fourth and check for doneness at that time.

    A standard jellyroll pan size is about 10x15x1 and has a 15 cup capacity. Some are 10-1/2x15-1/2 x 1-inches and can be use interchangeably in most recipes as the standard one. Or, you can use these instead:

    10-inch Bundt cake pan
    2 9-inch round cake pans
    2 8-inch round cake pans
    1 (9x13) baking dish

    Just remember as a general rule of thumb, for a cake to rise evenly, you should only fill a pan to the half-way mark with batter.

    greenmountain - I'm not all that smart, I just happen to have the right resource handy in a file ;-) I'm the "keeper of files" - piles and piles of files. This one is entitled "Pan Sizes". Glad I could help.

    This isn't exactly the solution to your problem, but it may help withother recipes you may want to bake in different sized pans.
    These measurements come in handy when you want to give away baked goods as gifts.

    Measure volume of pans by filling with water and pouring out into a measuring cup.

    BAKE AT 350
    Approx Pan volume= 1/3 c -use 1/4 c batter & bake 15-20 minutes

    Approx Pan volume= 1/2 c -use 1/3 c batter & bake 15-20 minutes

    Approx Pan volume= 2/3 to 3/4 c - use 1/2 c batter & bake 25-35 minutes

    Approx Pan volume= 1 c - use 3/4 c batter & bake 35-40 minutes
