    Poppy Seed Chicken
3 boneless skinless chicken breast (or whatever you use that would be equal to that)
Bake Chicken & chop up or put it in the food processor (I like this texture)
Now put the chopped chicken in a casserole dish
In a separate bowl, mix well:
1 can of Cream of Chicken soup
    4 oz of sour cream
1 onion chopped fine and cooked until just cooked

    Pour mixture over chopped chicken
Then take a sleeve of Ritz or club crackers & crumble all over the top of soup mixture.
Put 4 or so pats of butter on top of crackers then sprinkle poppy seeds on top of that (opt.).
    Bake 350 for 15 - 30 minutes - until hot.
Serve over rice if desired or with side salad

    Ziti with Broccoli (Cream Sauce)

    1 lb ziti-shaped pasta
    2 Tbls olive oil
2 cloves garlic, crushed (can use more if you prefer)
2 pkgs (10-oz each) frozen chopped broccoli, thawed and well drained
    1 c grated Parmesan cheese
4 c heavy cream (you can substitute 4 cups half and half (even fat-free), or 2 c cream with 2 cups low fat milk to lower fat)
2 c shredded Mozzarella cheese (light works fine)

Preheat oven to 350-degrees. Cook ziti in boiling water until al dente (still a little firm). Drain pasta and place in a large bowl; set aside. Heat olive oil in a skillet over med heat and saute garlic until lightly browned, about 1 minute. Combine garlic, broccoli, Parmesan cheese and cream with ziti. Spoon mixture into a large baking dish. Top with Mozzarella cheese and bake, covered, for 20 to 30 mins.

Can be made ahead and refrigerated until ready to bake.
