    Well... it's in the oven..........

    My $32.00(yikes) prime rib is in the oven. I put it in for an hour at 375º, then I turned off the oven. Now, the wait begins, we'll eat in about 2 hours. I taped a big sign on the oven, DO NOT OPEN THE OVEN DOOR!
    This is the first time I've ever made it. I'm nervous! I'm also making green bean casserole, I made the strawberry pretzel salad and we'll also have some fresh shrimp. I hope it turns out!

    Hi!!!!
    So, you put the roast in at 375 for an hour and turn oven off and 2 hrs. later it's done?
    Do you cover it?
    What would the degree of doneness be....rare? med rare? med well? or well done?
    Sorry for the dumb questions.

    You will be very impressed with the results. This is the first time that I tried this recipe because I have always done the 450 for a short time and then slow cooked it until it was done or I thought it was done. I tried this recipe, one hour at 375 then turned off the oven for three hours the half hour before eating, I turned it back on at 375. It was the best prime rib roast I have ever cooked. I bought the one that had no ribs in in, $49.63, but it was worth it. It fed three meals to our family. I used a really sharp knife and cut thin slices. Even the grandkids passed over the ham for the beef. Try it and you will never cook it any other way. I had to wire the oven shut as we did this on Christmas Eve and we had 21 people there any they could smell the roast and wanted to see where the smell was coming from.

    LOL@Flo! We had this recipe (as we do every year) on Christmas Eve. It is called "Foolproof Rare Roast Beef" and Paula Dean has it on her site at Foodtv.com. It is absolutely wonderful, if you like your beef rare. And you can cook it longer at the end if you like it medium. But don't even THINK about making it well done! LOL! You'll ruin a great piece of beef!!!
