    ISO: Sweet Potato Pie Recipes

    I want to make sweet potato pies for anniversary Sunday, this week end.
    I figured I could probably just us a pumpkin pie recipe. I want to do a regular pie and one to experiment with.

    I will check back tomorrow night since I will be making them on Sat.

    Here is a really good recipe from the great-grand daughter of a slave and she owns her own Cajun restaurant and said it is the best pie there ever was. She made this on baking with Julia Child-her name is Leah Chase.

    Sweet Potato Pie With Pecan Crust

    Pecan Crust Ingredients:

    1/2 cup shortening
    1/4 cup ice water
    1/4 cup chopped pecans
    1 1/2 cups all-purpose flour

    Mix all ingredients together until dough forms into a ball. Divide dough in half. Pat each half into a pie pan. Bake at 375F for 10 minutes.

    Sweet Potato Pie Filling Ingredienets:

    6 quarts (approximately) 6 peeled cooked and mashed sweet potatoes or yams
    1 teaspoon ground cinnamon
    2 large eggs
    1/2 cup Eagle Brand sweetened condensed milk
    1 teaspoon vanilla extract
    1/4 cup melted butter or margarine
    1 cup granulated white sugar

    Mix together all ingredients until smooth. Divide batter in half, and pour each half into each pre-baked pie shell. At this point, you can place as many pecan halves on top of each pie as you would like. Bake at 350F for 35 to 45 minutes or until knife inserted into center of pie comes out clean.

    Yield:2 pies

    This is the best sweet potato pie I have ever put in my mouth. The recipe is from my Grand Aunt, Ruth Hill of Shelby, NC

    3 large sweet potatoes
    1 stick butter
    3 eggs, beaten
    2 cups sugar
    1 small can evaporated milk
    1 1/2 Tbsp. cornstarch
    1 tsp. vanilla
    1 tsp. lemon flavoring
    3 pie shells
    Peel sweet potatoes, then boil them whole; drain water.
    Mash potatoes with butter. Add eggs and milk. Combine sugar with cornstarch; add to potato mixture. Finally, add vanilla and lemon flavoring.
    Pour into pie shells. Bake at 350 degrees until brown.
    Makes 3 pies.
